I love grilled vegetables, and this Easy Grilled Zucchini Recipe is my go-to when I get a good deal on zucchini!! This is a fantastic side dish that I love to grill up all summer.

Now I think my palate has expanded, but I just learned to be open to new foods and try new ways to cook vegetables! I love how easy this zucchini is to do, and I pair it up often with steaks or even just as a snack. Before starting Weight Watchers, french fries and corn on the cob were some of the only vegetables I would eat.

WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022 similar to previous plans like WW Smartpoints, with some color plans. ( You can see the Weight Watchers Zero Point Foods 2023 -> here)
No matter the WW plan, they work to help you learn healthy eating habits. I have hit lifetime goal weight several times but stopped operating the plan and tracking, so the weight does creep back on. You stay on as a lifetime member, working towards your goal. Head on over ->here to get a month for free.
Easy Grilled Zucchini Recipe Ingredients:
How To Make Grilled Zucchini:
Slice your zucchini into halves and trim off any of the stems that are left on the zucchini.

Measure out your olive oil and use a brush on the olive oil on the inside part of the zucchini. I measure mine out as I tend to use less when basting than drizzling the oil on.
Season to taste with your seasonings; you could even change these up.
Fire up your grill to medium-high heat.

On your upper rack, place your zucchinis and allow to cook for about ten minutes, and then flip again.
When they are closer to being done, I move them down to the bottom rack to ensure the doneness.

Serve and enjoy!!!
Weight Watchers Points Breakdown Grilled Zucchini
The only ingredient with points is the olive oil. You can use even less. I rounded up to 1 Tablespoon. It may have been less. Be sure to scan your bottle to make sure the points are accurate.

Since these are low points, I paired it up with some higher-point foods. Grilled chicken thighs, white rice, and a Caesar salad.

How To Store Grilled Zucchini
You can store in the fridge in an air-tight bag or container for up to three days. This will not freeze well after cooking.
How To Reheat Grilled Zucchini
You can reheat leftover grilled zucchini in the microwave, oven, in a frying pan, or on the grill on low.
What to serve with Grilled Zucchini
No side dish or main dish is off-limits when you grill, and any main dish can be served with grilled zucchini and any other cook-out side dish or dessert! Check out my post, What To Bring To A Cookout, for inspiration!
