Easy Grilled Zucchini Recipe

I love grilled vegetables, and this Easy Grilled Zucchini Recipe is my go-to when I get a good deal on zucchini!! Â Pair this up with your favorite grilled protein, or I have even been known to just make it as a snack as well. Easy to make, little work, and tasty the perfect side dish recipe.

Zucchini is one of those spring/summer vegetables that I look forward to every summer. As much as I love it in other recipes, it is a perfect stand-alone side dish. Pair with grilled chicken, steak, or pork chops for a quick and easy dinner, especially when accompanied by a side of white rice.

How To Make Grilled Zucchini:
Slice your zucchini into halves and trim off any of the stems that are left on the zucchini.

Measure out your olive oil and use a brush on the olive oil on the inside part of the zucchini. I measure mine out as I tend to use less when basting than when drizzling the oil on.Â
Season to taste with your seasonings; you could even change these up.
Fire up your grill to medium-high heat.

On your upper rack, place your zucchinis and allow to cook for about ten minutes, and then flip again.
When they are closer to being done, I move them down to the bottom rack to ensure the doneness.

Weight Watchers Points Breakdown Grilled Zucchini
The only ingredient with points is the olive oil. You can use even less. I rounded up to 1 Tablespoon. It may have been less. Be sure to scan your bottle to make sure the points are accurate.
Since these are low points, I paired it up with some higher-point foods. Grilled chicken thighs, white rice, and a Caesar salad.

How To Store Grilled Zucchini
You can store it in the fridge in an air-tight bag or container for up to three days. This will not freeze well after cooking.
How To Reheat Grilled Zucchini
You can reheat leftover grilled zucchini in the microwave, oven, in a frying pan, or on the grill on low.
What to serve with Grilled Zucchini
