Watermelon Salad With Feta Recipe

I tried this Weight Watchers Watermelon Salad With Feta Recipe last year at a cookout and loved it! Now previously I never would have thought these flavors would come together to make a tasty light summer dessert but it works! Watermelon is zero on the Weight Watchers Simplified Plan!

I love that our farm stand is now selling fresh watermelons! This is one fruit everyone in my family loves to eat. I try to find ways to change it up, and this is one of my go-tos when we get invited to potlucks or family BBQs!

How To Make Watermelon Salad With Feta:

Start by cutting up your watermelon.

Next, chop up your mint leaves; we peel them off the stems first. Fresh mint works best for this recipe, but in a pinch, you could use dried mint

In a bowl, place your watermelon and sprinkle over your mint and salt.  

This Watermelon Salad With Feta Recipe is perfect to take to BBQs or potlucks! Add in some balsamic vinegar, mint, and feta cheese for amazing flavor!

Stir the mixture, then sprinkle with feta cheese. 

Next, slowly drizzle the balsamic vinegar over your dish. 

Allow to chill for 30 minutes, and then serve and enjoy!!! 

How to Store Watermelon Salad

Store in an airtight container in the fridge for up to two days. It does not seem to last long; when I have leftovers, I try to remove any remaining cheese crumbs and then top them with fresh feta crumbs.

    Hello Jenny. This recipe is Simply Delish! I am not a big fan of Feta, but once in a while & it works well with these sweet flavors. I would add Crumbled Boursin for a substitute as well. I had a Grilled Peach & Watermelon Salad at a place called ” Clean Plate” in Providence, RI , & it had Baby Spinach, & other greens-Freesi? (can’t spell it), Red Lettuce, Romaine & Mint w/Reduced Balsamic Vinegar! I tell you, I order it every time I go there now. as well as their Chicken Breast & Waffles & the Heart Attack Burger I call it, lol. ( P. Butter & Bacon Burger) & they are Heavenly as well as the salad. I make them all at home now ! I hope you will try them too-but only in moderation! I don’t wan’t you top get sick. Enjoy!
