Hi, I’m Jenny – the creator and owner of Cook Eat Go, where I share practical, delicious, and family-friendly recipes that fit real life. As a work-at-home single mom of three amazing kids (and now a proud grandma!), I understand the challenges of balancing budget-friendly meals, healthy eating, and the chaos of a busy household.

I live in Puyallup, Washington, in the South Puget Sound area, about an hour south of Seattle. My passion for food, fitness, and family fuels everything I share on Cook Eat Go – whether it’s quick weeknight dinners, meal prep ideas, or finding the right balance between indulgence and healthy living.

My Journey to Cooking & Healthy Living

I didn’t always love cooking. In fact, before joining Weight Watchers (WW) in 2011, I had never really made a home-cooked meal! But through out my journey of losing 70 pounds, I learned how to create delicious, satisfying meals that weren’t just “diet food.”

Over time, my approach evolved. I realized that balance, not restriction, was the key to long-term success. After years on WW, I transitioned to macro tracking, strength training, and a reverse diet in 2023 to rebuild my metabolism after years of low-calorie eating. In March 2025, I officially entered a cutting phase after more than a year of maintenance and reverse dieting – proving that sustainable health is a journey, not a destination.

From Fast Food to Full-Time Entrepreneur

My career path wasn’t traditional (like many of my readers’!), but every step led me to where I am today.

  • After high school, I attended Black Hills State University and later earned my AA in Administrative Assistance while pursuing a Bachelor’s in Business and marketing.
  • I worked in fast food management (Taco Bell, Pizza Hut, KFC) before becoming a stay-at-home mom in 2007.
  • In 2010, I started working online as a virtual assistant on a coupon forum.
  • In 2011, I launched Penny Pincher Jenny, which later became Cook Eat Go in 2016, evolving into what it is today – a trusted resource for busy families looking for easy, affordable, and delicious meal solutions.

How Penny Pincher Jenny Taught Me Budget-Friendly Cooking

When I started Penny Pincher Jenny, my main goal was to save money while feeding my family. As a single mom, I had to make every dollar stretch, so I became an expert at couponing, meal planning, and finding creative ways to cook on a budget. I learned how to turn simple, affordable ingredients into satisfying meals, batch cook to save time and money, and use pantry staples to create versatile dishes.

What started as a personal journey quickly became something bigger—helping others do the same. Over time, I discovered that eating well doesn’t have to be expensive—it just takes a little creativity and planning. These lessons became the foundation of Cook Eat Go, where I continue to share practical, cost-conscious meal solutions that help families eat well without overspending.

About Kylie- Kylie is the oldest child and is now officially an adult. She loves to travel, becoming quite the foodie, and has moved out onto her own adventures!

About Michael: Michael is a typical teenage boy and a huge sports fanatic. His favorite sport to play or watch is soccer. Soccer has helped Michael better control his ADHD and his insomnia. He is also my sidekick in the kitchen often and at the grill!! He is currently a high school athlete in soccer, the high school football kicker, and playing soccer in a private league. We have navigated the world of concussions, as he had four in six months in 2018, followed by more since then.

About Bella– She is a typical teenage girl obsessed with everything: Minions and Capabaryas! She is quite the chef and baker and loves to cut and prep all the vegetables for the recipes cooked on the site.
