These 2 ingredient lemon bars are made with angel food cake mix and are one of the easiest desserts you can throw together. I mean, two ingredients, you don’t need eggs, you don’t measure anything, and it’s less than thirty minutes to make! They’re light, bright, and lemony, with only 111 calories per serving, making them a great option when you want something sweet without going overboard. They are perfect for a spring brunch, a potluck, a summer cookout, or an after-dinner treat the whole family will love.

Fair warning, these aren’t your traditional lemon bars with a shortbread crust. Think of them more like a light, fluffy lemon cake bar. The angel food cake mix gives them that airy texture, and the lemon pie filling brings all the bright citrus flavor. While my daughter Isabella was honestly a little bummed that there are only two steps, once she tasted them, she was sold. They’re a great lighter dessert option, and at just 111 calories a bar, they’re easy to enjoy without a large amount of calories.

- Lemon Pie Filling– This was right next to other pie fillings in the baking aisle at my store.
- Angel Food Cake– You will need just the powder from the box mix, nothing else on the ingredient list.
- Powdered Sugar

How To Make Lemon Bars With Cake Mix
Preheat your oven to 350 degrees.
Mix the pie filling with the angel food cake powder in a bowl.
This is a thick batter, so stir slowly to avoid a mess.
Grease your cake pan with shortening.
Pour the mixed lemon bar batter into the 9X13 pan. I used a glass Pyrex pan to bake mine in.

Bake the lemon bars for about 24-28 minutes, the top of the cake will brown a bit as it gets done.
Remove and allow to partly cool at least before serving.

You can sprinkle with powdered sugar, and one of my kids also put spray whipped topping on theirs.

How To Store Two Ingredient Lemon Bars
After making them, store them in an airtight container in the fridge for up to three days. They taste delicious cold.

I put lemon frosting on mine !

I zest 1 lemon, and the the juice, really makes it pop!
Can you use cooking spray ?
Could you use a lemon pie filling mixed up as you would(sherrifs) from a box instead of a can of lemon pie filling.

the box of angel food cake mix has an envelope of meringue mix and a bag of cake mix do you mix like it says on box i mixed all together and it was very thick heavy and dense.it was mixed dry. these look so good just need verification on cake mix.
My angel food cake mix didn’t come with that. It was the box of angel food cake mix and a can of lemon pie filling.

Mine was too fluffy and never fell like a lemon bar.
It’s an angel food cake and it’s not supposed to fall.
I went back after reading the reviews and started all over. It does say Lemon Bar but using an Angel Food cake mix I would not expect it to fall much. I think maybe greasing the pan and using a 9X13 pan may keep it from normal rising. All instructions for Angel Food cakes warn not to grease the pan so it will rise. Look at the cherry Angel Food picture it shows using the tube pan and it rises like one should. Both recipes call for a can of pie filling and a box of cake mix. There are two kinds of Angel Food cake mix.. One has two packages inside and the other has one. Use the one that has one package. I’m not sure it would work with the two. I’m in Texas the mix that has one package inside is usually what we have. If you want the one that has two inside you have to hunt for it an you may have to go to several grocery stores. That is the one my grandmother used and her cakes were great. I use the one that has one package because that’s what we have here and I don’t have time to hunt for the one with two packages.
Where’s the crust? This is a dense lemon cake, not the lemon squares that everyone loves. I added a crust and lemon zest to make them like I expect a lemon square to be.
You can put another can of pie filling on top of the bars. without the powder sugar on.Put cool whip on and you have a Lemon tort.
I followed the recipe to the letter. It blew up so high in the 9×13 that it overflowed and burned all over the oven floor. What did I do wrong?

Horrible! Didn’t like consistency at all. Used gluten free angel food cake mix. Would that be reason turned out so rubbery? Very disappointed.
i added 6 tablespoons lemon juice and 1 tbsp lemon flavoring just cause,the batter tasted yummy im waiting for them to cool now.

This is the worst dessert hack I’ve ever tried. It tastes like lemon soap, and the texture is dense and rubbery.
This was so easy and it was so good. I am making it to take to a reunion.
