This Loaded Twice Baked Potato Salad will be everyone’s favorite this summer; it is comfort food as a side dish. With all the flavors you love from a classic twice-baked potato, it’s a crowd-pleasing side dish for BBQs, cookouts, and camping trips. It is an easy-to-follow recipe that will rival any deli salad you can get at the store. And everyone will be begging you for the recipe.

Now, the store behind this recipe is that we went to a BBQ, and on the way, we hit the store to get a side dish. I was shocked at how much they charged, but it was delicious! It was the first side dish to disappear at the gathering, so I knew I had to make my own, and ever since then, I have always been asked for the recipe!

- Baking Potatoes
- Sour Cream
- Mayonnaise
- Bacon
- Green Onions
- Cheddar Cheese
- Honey Dijon Mustard
- Salt and Black Pepper

How to Make Baked Potato Salad:
Preheat your oven to 400 degrees.
Rinse off your potatoes and pat them dry for putting in the oven. This will remove any lose dirt off the potato.

Stab your potatoes with skewers or forks. This will help the potatoes to not explode while they are baking.
Place them on the oven rack for about an hour until soft. You can flip them halfway through if you want.
Remove the potatoes and allow to cool for 15 to 20 minutes so you can handle them.
Cut up your bacon and cook it to your preference of doneness; we like ours chewy.
Place the bacon on a paper towel to help remove excess grease.

Slice your green onion and shred your cheese if needed.
You will reserve some of the cheese, bacon, and green onions for garnishment for serving.
In a large mixing bowl, whisk together the sour cream, mayonnaise, honey Dijon mustard, salt, and pepper until fully combined.
Cut your potatoes into about 1-inch pieces. You can also remove the peel of the potatoes if you want.

Now I combined the potatoes and the dressing up in a Tupperware Mega Bowl. My mom got this for me, and it has been excellent at mixing everything!! It’s called THATSA® MEGA BOWL, and we have used it for everything. They are on Amazon as -> here!!
Add the chopped potatoes to the bowl and combine everything together until the potatoes are evenly coated. Be careful not to mash them—you’re going for a chunky, rustic texture.
If there is not enough dressing, you can add more mayo and mustard. Sometimes, the potatoes are bigger and require more dressing.

Allow to chill in the fridge for a couple of hours before serving. This allows the dressing’s flavor to marinate the potatoes.
Top with your garnishment!!
Serve! I moved mine into a large glass Pyrex bowl to take to the cookout.

Ingredients
- 4 Pounds Baking Potatoes
- 1 1/2 Cup Sour Cream
- 1 1/2 Cup Mayonnaise
- 16 Slices Bacon
- 4 Green Onions
- 1 Cup Cheddar Cheese
- Honey Dijon Mustard Start at 2 Tablespoon and add
- Salt
- Black Pepper
Instructions

- Allow to chill in the fridge for a couple of hours before serving.
- Top with your garnishment!!
