This Red Velvet Weight Watchers Muffins Recipe is the perfect way to stay on track and have your cake while on Weight Watchers, aka WW plan! Now while they are more miniature muffins, I love to make them when the kids have friends over or we have a get-together.

These Red Velvet Weight Watchers Muffins are the perfect little sweet treat!! My son is a Red Velvet cake fanatic. However, I prefer for there to not be all the calories of regular cake. I fell in love with making -> Lemon Weight Watchers Muffins that I had found in a Weight Watcher Facebook group, so we decided to switch it up and try it with a Red Velvet mix.
I love how simple and quick these muffins are to whip up. These WW muffins are always Isabella’s favorite to make; even when she was younger, she made them herself. They are that easy to make! I personally use the app Myfitnesspal to track my food. I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.
Red Velvet Weight Watchers Muffins Ingredients:
- Red Velvet Cake Mix– Any brand will work; I have always used Betty Crocker. If you can find a sugar-free or reduced sugar, this will lower calories and Weight Watchers Points.
- Greek Vanilla Yogurt- Using a nonfat greek yogurt will lower the calories and the WW Point.s If you can’t find vanilla, you can use plain a bit of vanilla extract.
- Water
**Note you will not use any of the other ingredients listed on the box just the powder so no oil or eggs**

How To Make 3 Ingredient Red Velvet Muffins.
Be sure to preheat your oven to 350 degrees.
Start by whisking together your yogurt and water in a bowl.
Next, slowly mix in the dry cake mix; you will not use any other ingredients listed on the cake mix box.

Take a paper towel, wet it with vegetable oil, and rub down the Muffin Pan with the greased paper towel. You do this so the muffins will easily pop out of the pan.

Scope the muffin batter into the silicone muffin pan. I always use a cookie scoop to fill the baking cups half full, which grow relatively large.
You could use a small cake pan to make a weight watchers red velvet cake and watch how long it bakes to tell when it’s done.
Bake for about 15-22 minutes, depending on your oven. I use a toothpick to check the doneness of the muffin.

Serve and enjoy!!

Be sure to recalculate your cake mix and how many muffins your batch makes for you into the recipe builder on the WW site. (Not a member yet? You can join here and get a free month; sometimes they change the promotions, so be sure to look). I was able to make 35 mini muffins. I think it would make 13-14 regular muffins.
Also, brands make a difference so also use the recipe builder with your brand’s information. My muffins worked out to 2 Weight Watchers Points per muffin.

Use an air-tight bag or container to store these red velvet muffins with cake mix; they will be best with in three days but should last five to seven days when stored correctly.

I do not understand the points system, but as a diabetic I can use these great recipes if I know the caloric equivalent.
