These Chocolate Kodiak Muffins are a low-calorie and high-protein muffin recipe that you will make often. These muffins are macro-friendly, family-approved, and perfect for meal prep. Made with pantry ingredients and a quick mix-and-bake process, you can easily double or triple the batch for a busy week. They’re easy enough for older kids and teens to make on their own, and they feel like a treat without blowing your goals.
Chocolate Kodiak Muffins Ingredients:
- Eggs– I use large eggs to bake the muffins.
- Unsweetened Apple Sauce– Using sweetened applesauce will add calories or points to the recipe due to its sugar.
- Brown Sugar
- Vanilla
- Milk– I used 2% milk for my recipe; you can use lower-fat milk to reduce points, but it may change some of the consistency of the muffins.
- Kodiak Cake Chocolate Chip Power Cake Mix– You can use a different base of Kodiak pancake mix; it may change the nutritional value of your muffins.
- Baking Powder
- Baking Cocoa
- Water
Important note: The ingredients listed on the cake mix are not needed for this recipe; only the pancake mix powder in the box is needed. Ignore the water amount, eggs, and oil on the box.

How To Make Muffins With Kodiak Pancake Mix:
Grease your silicone muffin pan with oil, or line your muffin pan with muffin liners. Silicone is great for muffins because there is no trash! No finding random wrappers or hunting for a trashcan.

Preheat your oven to 350 degrees.
In a large bowl, mix all the wet ingredients well.
Next, add the dry ingredients to the bowl and mix well.

Scoop the muffin batter into the muffin pan.
Bake for about 17 minutes, and check the doneness of the muffins. Test by inserting a toothpick into the muffin to ensure it comes out clean.

I wanted to add chocolate chips to the recipe so I put the ingredients into Ai – technically it should only add about 20 calories to each muffin – making it 56 calories – somehow it brought me to 112 calories – how did you calculate your nutrician?
I plugged the ingredients into Myfitness pal for the marcros inside the post. I added a note to the recipe card that the plug in for the recipe card is not always accruate. I have no control of what it calculates as the itme and get as close as I can to the options for ingredietns it offers.
