How To Make Carrot Cake Muffins From Cake Mix

Preheat your oven to 350 degrees.

In a bowl, whisk together the yogurt and water until smooth. This ensures they are well combined before adding the cake mix.

Mix in the dry cake mix. I start with half the mix, then add the rest. The other ingredients on the box are not needed.

Take a paper towel and get it wet with vegetable oil.

Rub down the Mini muffin Pan with the greased paper towel, if you are using silicone, so your muffins will easily pop out of the pan. If using a metal pan, grease it down or use muffin liners.

I always use a cookie scoop to fill the baking cups half full; the muffins expand significantly while baking.

Bake for approximately 15-22 minutes, depending on your oven’s temperature. Use a toothpick to check the doneness of the muffins. The toothpick will come out clean when the muffins are done.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

How To Lower Calories In Cake Mix And Yogurt Muffins

Replace the regular cake mix with a low-sugar or no-sugar cake mix powder. This may affect the taste of the muffins.

Use nonfat yogurt instead of vanilla yogurt. You can add some vanilla extract to sweeten the muffins and compensate for the loss of vanilla in the Greek yogurt.
