These Weight Watchers Funfetti Muffins are a ton of fun! I love anything Funfetti, and to find ways to make them a lower Weight Watchers Points value is a total win! While they are mini muffins they pack a nice sweet flavor to them.

I love to make mini muffins. Snacking is a favorite of mine, even when on a weight loss journey or just eating healthily. (I mean, everyone’s right? ) These are light and airy with the perfect amount of sweetness to them. Plus they are low points if you are on WW!

WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. ( You can see the Weight Watchers Zero Point Foods 2023 -> here)
No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.
Right now, you can head on over -> here and sign up for Weight Watchers for $5 a month for the first three months.

How To Make Cake Mix Funfetti Muffins
Preheat your oven to 350 degrees. It does take a moment to assemble, allowing plenty of time for the oven to get hot enough.
In a bowl, whisk together your yogurt and water. I do this before adding the dry mix, as sometimes adding the wet to the dry makes it a bit difficult to mix together.
Mix the dry cake mix with the water and yogurt.; you will not use any other ingredients listed on the cake mix box.
Wet a paper towel with vegetable oil if using a silicone muffin pan.
Rub the Muffin Pan with the paper towel to grease the pan so your muffins will pop out, or line with muffin liners. I prefer the silicone pans so there aren’t wrappers everywhere.
I always use a cookie scoop to fill the baking cups; these muffins do expand up quite a bit. Be sure not to over-fill the muffin cup, or it will make a mess.
Bake for about 15-22 minutes, depending on your oven. Use a toothpick to check the doneness of the muffin.
I remove my muffins by popping up from the bottom of the silicone pan; they typically pop out clean!
Place the muffins on a baking rack to help cool off before you bag them up! These muffins tend to hold the heat, so be sure to cool them properly!
Regrease your pan and bake the rest of the batter.
I get from 32-40 muffins, depending on how full the muffin pan cups are before baking.
Funfetti WEIGHT WATCHERS MUFFINS WW Points BREAKDOWN:
Now with any Weight Watcher recipe, be sure to replug your ingredients on the recipe for proper point calculation and tracking. I have included screenshots from the recipe builder on WW when I had 37 muffins in a batch. Mine worked out to three weight watchers points per mini muffin.
How To Store Funfetti Muffins
Store the Funfetti muffins in an air-tight bag on the counter for up to five days. You can freeze these in an air-tight container for up to 90 days.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
