These Weight Watchers Funfetti Muffins are a ton of fun! I love anything Funfetti, and finding ways to make them lower in Weight Watchers Points is a total win! While they are mini muffins they pack a nice sweet flavor to them.

I love to make mini muffins. Snacking is a favorite of mine, even when on a weight loss journey or just eating healthily. (I mean, everyone’s right? ) These are light and airy with the perfect amount of sweetness to them. Plus they are low points if you are on WW!

I personally use the app Myfitnesspal to track my food. I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

- Funfetti Cake Mix-You can use a sugar-free cake mix to lower the calories in this recipe. Other flavors can be used for cake mixes.
- Greek Nonfat Yogurt– A Zero fat Greek yogurt will also lower the Weight Watchers Points per muffin and the calories.

How To Make Cake Mix Funfetti Muffins
Preheat your oven to 350 degrees. It does take a moment to assemble, allowing plenty of time for the oven to heat up.
In a bowl, whisk together your yogurt and water. I do this before adding the dry mix, as adding the wet to the dry can make it a bit difficult to mix.

Mix the dry cake mix with the water and yogurt.; you will not use any other ingredients listed on the cake mix box.

Wet a paper towel with vegetable oil if using a silicone muffin pan.
Rub the Muffin Pan with the paper towel to grease the pan so your muffins will pop out, or line with muffin liners. I prefer the silicone pans so there aren’t wrappers everywhere.
I always use a cookie scoop to fill the baking cups; these muffins do expand up quite a bit. Be sure not to over-fill the muffin cup, or it will make a mess.

Bake for about 15-22 minutes, depending on your oven. Use a toothpick to check the muffin’s doneness.
I remove my muffins by popping up from the bottom of the silicone pan; they typically pop out clean!

Place the muffins on a baking rack to help cool off before you bag them up! These muffins tend to hold the heat, so be sure to cool them properly!

Regrease your pan and bake the rest of the batter.
I get from 32 to 40 muffins, depending on how full the muffin pan cups are before baking.

Now, with any Weight Watchers recipe, be sure to replug your ingredients on the recipe for proper point calculation and tracking. I Mine worked out to three Weight Watchers points per mini muffin.
How To Store Funfetti Muffins
Store the Funfetti muffins in an air-tight bag on the counter for up to five days. You can freeze these in an air-tight container for up to 90 days.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
