I will be the first to say I love the Weight Watchers program, but I have a confession to make to you! I have been protesting the new program and my waistline shows it. Why you say?? Well the first program I tried was Points Plus, it worked great for me and I even hit my goal weight!!
But then life happened I fell off the wagon came back to the program to find a new one Smart Points. With all the change that had happened in my life, I was resistant to another added change! Well, time to get serious about my health and start tracking and losing again! I have to say I still love my old recipes so I am reading them with Smart Points. Luckily the point change on my Lemon Muffins wasn’t too horrific! (I have included links to some great products that I have bought on my own to make my journey easier. You can buy them too through my online sales links.)
I am sure you know if you have been doing Weight Watchers that there are times you make something that your family doesn’t like but that you do. Luckily these are not that way, the kids even love these muffins when we make them. I found this originally in a Weight Watcher support facebook group, this time around I could not find the 100 calorie lemon yogurt so I had to substitute with a vanilla yogurt but they still turned out great!! Now my favorite way to bake these is in my Grazia Silicone Muffin Pan!! I have the worst luck with metal pans, I seem to burn everything in them so silicone pans are the way to bake for me when I can’t find glass pans. Luckily you can pick up Grazia Silicone Muffin Pan for a great price on Amazon, plus you can order one on Amazon so you don’t even have to leave the house, order and bam UPS man is at the door saving you time for you when you use Amazon Prime 2 day delivery! (Don’t have Prime? You NEED it for easy online shopping!!)
Lemon Weight Watchers Muffins Ingredients:
- 1 Cup of Water
- 1 Low-calorie lemon or vanilla greek yogurt
- 1 Box lemon cake mix
Lemon Weight Watchers Muffins Directions:
Preheat your oven to 350 degrees
Take a paper towel and wet it with vegetable oil
Rub the Muffin Pan with the paper towel to grease the pan so that your muffins will pop on out
In a bowl mix together all three ingredients until well mixed, it’s a weird light fluffy dough and smells amazing
Using a spoon scoop the dough into the muffin pan until all 24 are full, this do rise up a bit so don’t fill up all the way
Set in the oven and bake for about 15-22 minutes depending on how hot your oven cooks
Remove from oven when you can remove a clean toothpick and allow to cool for 10 minutes
I remove my muffins by popping up from the bottom, they typically pop out clean! Once they are popped out you can set them on a baking rack to help cool off before you bag them up! These do tend to hold the heat, so be sure to properly cool! I have about 10 different wire racks, when I go on a baking frenzy it’s really handy to have a lot of them! I use mine at least once a week!
Regrease your pan and bake the rest of the batter, I get from 32-40 muffins depending on how full the cups of the muffin pan are before baking
Now with any Weight Watcher recipe be sure to replug in your ingredients on E-tools for proper point calculation and tracking. Mine worked out to 2 Smart Points or 1 Points Plus I have included screen shots of both from the recipe maker on Weight Watchers (Points Plus image is from the first time I had made these)
Lemon Weight Watchers Muffins 1 Points Plus Value or 2 Smart Points!
- 1 Lemon Cake Mix
- 1 100 Calorie Lemon Yogurt
- 1 Cup of water
Pre Heat oven to 350 degrees
Mix together all ingredients together in bowl
Line or grease your cupcake pan
Fill half full (These ones grow large with baking)
Bake for about 15-22 minutes depending on your oven
