WW Chinese Chicken Salad

I am in love with this Chinese Chicken Salad! I have been on a salad kick, and this was my latest one to make with chicken and a cabbage salad. This salad is low Weight Watchers points, and now I am also obsessed with the Skinny Girl dressing.

Now, this could also be called an Asian chicken salad. Thankfully, I have a friend who is a salad fanatic, so she is always sharing fun creations with me. This combination beats boring icebergs or salad kits from the store. Plus this works out to be a low Weight Watchers points!

I personally use the app Myfitnesspal to track my food. I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

Skinny Girl Asian Sesame Ginger Salad Dressing
Boneless Skinless Chicken Breasts– You can use boneless skinless chicken thighs, but I prefer breasts, and they are also zero Weight Watchers points.
Chinese Chicken Salad Ingredients
Shredded Chicken Breast– You can make this as Crockpot Shredded Chicken, or you can substitute it with canned chicken or shredded rotisserie chicken.
Cabbage– Using store-bought coleslaw mix makes this so easy to do, but if you want, you can buy heads of cabbage and cut them up.
Red Onion—I love the taste of red onion, but you can substitute it with yellow or white onion if that is your taste preference.
Mandarin Oranges– You can use canned or fresh for this recipe. Canned mandarin oranges in water are zero points.

How To make Shredded Chicken
You can do this part in a couple of ways. Making the chicken is my go-to way; I always have it in the fridge. But if all you have is canned chicken or rotisserie chicken, that works, too!

Spray the crockpot with a nonstick spray, and place chicken breasts on the bottom.
Pour in a bottle of Skinny Girl Skinnygirl Asian Sesame Ginger Salad Dressing or chicken broth.

Allow to cook and then shred. (You can find more in depth directions ->here)

How To Make Chinese Chicken Salad
Make your shredded chicken, or open a can of chicken.
Cut your red onion into small pieces. If you need to cut or shred up your cabbage.
Cut the orange if needed or strain from liquid.

Place a meal prep container or bowl on a food scale and zero it out.
These meal prep containers from Gald and a food scale are crucial to my meal prepping. This is my food scale -> here. It’s easy to reset and change the units while dishing out food or measuring.
Layer in cabbage, chicken, red onion, mandarin oranges, wontons, and sliced almonds. Be sure to zero out the scale and change measurements as needed.

Top with Skinny Girl Asian Sesame Ginger Salad Dressing. Up to 4 Tablespoons of this dressing is zero points.

Serve and enjoy!

How to Store WW Chinese Chicken Salad
Store the salad without dressing in an airtight container in the fridge. You can also leave the oranges off, but I haven’t had a problem. It will stay that way for up to three days after making the salad.
With the dressing mixed in, store in the fridge and eat within a couple of hours.
Chinese Chicken Salad Dressing Options
Be sure to check your dressing before adding it to the salad, as points change from brand to brand. Also, sometimes the manufacturer changes the ingredients, and the app won’t have up-to-date information.
- Walden Farms Sesame ginger dressing– 0 points for all servings of the dressing.
- Kraft Light Asian Sesame Dressing– This is 4 points for two tablespoons.
- O Organics Soy ginger organic dressing– 1 Point for two tablespoons.
Asian Chicken Salad Optional Add-ins
Be sure to track whatever you add to the salad. Some will add in points and calories and change the point value or macros of the meal.
- Crispy Rice Noodles
- Bell Peppers
- Cilantro
- Green Onions
- Sesame Seeds
- Cucumbers
- Bean Sprouts
- Edamame

Weight Watchers Breakdown
As I made it, this salad works out to 2 WW points for the whole thing. Be sure to recalculate the points on your own, especially if you use other brands of products.

How To Make Shredded Asian Sesame Chicken
- Spray your crockpot with a nonstick spray.
- Place your chicken breasts in the bottom of crockpot.
- Cover with Skinny Girl Asian Sesame Ginger Salad Dressing
- Cook on low for 4 to 6 hours.
- Remove from crockpot and shred.
How To Make Chinese Chicken Salad
- Make your shredded chicken.
- Cut your red onion and remove oranges from liquids.
- Set your dish on a food scale.
- Layer in your cabbage, chicken, red onion, mandarin oranges, wontons, and sliced almonds.
- Top with Skinny Girl Asian Sesame Ginger Salad Dressing.
- Serve!

I want to make this amazing salad but have a question. One place it says to use the whole bottle of dressing over the chicken and another place it says to use 4 oz.?

I use a whole bottle to make the shredded chicken in the crockpot. Then, I use another four tablespoons on the salad with the cabbage for more flavor.
