Made with Kodiak Cake mix for a boost of protein and fiber, these muffins come together in minutes and bake up light, moist, and full of flavor. The secret hack? Soaking the Craisins in orange juice adds a burst of brightness and keeps every bite perfectly tender. These Kodiak muffins are perfect for meal prep, freezing for later, and they will help you stay on track with your WW or calorie goals.

Kodiak Muffins Directions
About an hour before making your muffins, soak your craisins in orange juice. Soaking the craisins in the orange will allow them to be rehydrated and have a good texture for baking. Plus, it adds a delicious orange flavor as well.

Grease your silicone muffin pan with oil, or line your muffin pan with muffin liners. (I am in love with this Figmint muffin pan from Target, the frame makes it easy to pull the pan in and out of the oven. (see it -> here)
You can use metal muffin tins, but I wouldn’t use papers; they will stick to the Kodiak muffins. Grease down the muffin tin or pans before adding batter.
Preheat your oven to 350 degrees and get started on mixing.
Add all the ingredients except for the craisins and almonds to a large bowl. You can use the orange juice from the containers of craisins soaking.

Mix well with an electric mixer or whisk. I used an electric hand mixer cause it was faster lol. This will be a thicker batter for muffins.
Next, strain out your craisins and mix them into the muffin batter.

In a Ziploc bag, use a Kitchen Mallet to crush your almond slices.

Reserve some crushed almonds for muffin garnish, and mix the rest into the muffin batter.

Scoop the batter into your muffin pan. Using a scoop or measuring cup will keep the batter amounts more even.
Sprinkle with almonds reserved for garnish.

Bake for about 20 minutes. You will want to use a toothpick to make sure they are thoroughly cooked.
Allow to set in the muffin pan for ten minutes before moving to a wire rack to fully cool.

Now, be sure to plug in all your ingredients on your own. Some brands will vary in point value, and the number of muffins you make in a batch will affect the point value. Following the recipe, my muffins worked out to 3 points each.
What Makes These Muffins Low Calorie And Macro Friendly
According to the recipe, the Macros are 119 calories, 2 grams of fat, 19 grams of carbohydrates, and 5 grams of protein. For 11 muffins, if you can measure better than I can and get 12, the macros will be different.
How To Lower Points or Calories
- Use a brown sugar substitute like honey, maple syrup, or agave
- Skim milk in place of 2% milk
- Fresh cranberries in place of craisins
How To Store Cranberry Muffins
Store in an air-tight container or bag. These can be stored on the counter for up to 5 days or can be frozen. If freezing, thaw and eat within 90 days of baking them.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
