Easy Lemon Muffins With Greek Yogurt

These lemon yogurt muffins are the perfect light treat. They are low in calories and low in Weight Watchers points as well. They are made with three pantry ingredients, which also makes them budget-friendly, and they freeze well.

Muffins are perfect for a leisurely breakfast on the go, after-school snacks, and also double as desserts. I love to make muffins like these when go to potlucks, everyone loves being able to pop one in their mouth. Also, this is so easy that the kids can pretty much whip them up!

How To Make Lemon Muffins

Preheat your oven to 350 degrees

Take a paper towel and wet it with vegetable oil

Rub the Muffin Pan with a paper towel to grease it, so your muffins will pop out easily. You can use muffin liners if you want. I prefer not to use paper because I don’t like the waste.

In a bowl, mix all three ingredients until well mixed; it’s a weird, light, fluffy dough and smells amazing.

Using a cookie scoop, spoon the dough into the muffin pan until all 24 are full; these do rise a bit, so don’t fill up all the way

Set in the oven and bake for about 15-22 minutes, depending on how hot your oven cooks

Remove from oven when you can remove a clean toothpick and allow to cool for 10 minutes

I remove my muffins by popping up from the bottom; they typically pop out clean!

Place the muffins on a baking rack to help cool off before you bag them up! These do tend to hold the heat, so be sure to cool them properly! I have about ten different wire racks; when I go on a baking frenzy, it’s convenient to have a lot of them! I use mine at least once a week!

Regrease your pan and bake the rest of the batter. I get from 32 to 40 muffins, depending on how full the cups of the muffin pan are before baking

Pop them out and enjoy!

Now, with any Weight Watchers recipe, be sure to plug your ingredients into the recipe for proper point calculation and tracking. Mine was calculated by making 37 mini muffins in a batch, and each mini muffin is two Weight Watchers points.

Macros For Lemon Muffins

The macros for this recipe using a non fat greek yogurt per muffin is 88 Calories, 6 grams of carbs, 0 grams of fat, and 16 grams of protein.

To lower further you can use a sugar free cake mix which will also lower the sugar content of these muffins as well.

How To Store Yogurt Lemon Muffins

Store in an air-tight bag on the counter for up to five days. You can freeze these in an air-tight container for up to 90 days.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

  1. I would love to try these – I count calories, not WW points. I am sure this must be a typo in the recipe, because surely one little muffin can’t have 2,232 calories! Can you please advise as to the correct calorie count? Thanks so much 🙂

    1. Because she’s using the WW’s calculator, that is the total for the entire batch. You would just need to divide by how many muffins it makes for you (same for fat, protein, etc.). In her case, with 32 minis, it would be around 69-70 calories each. Hope that helps. 🙂

        1. I’d say yes they are as you probably count carbs more than sugar and they would be low in carbs to be 2 WW points.

  2. I made these tonight, they are wonderful! So easy to make have an actual muffin consistency. I calculated my WW points and they came out to 2 points each but I believe thats because I had larger muffins.

    1. I love these recipes with yogurt!! I get the triple zero yogurt by Chiobani. I made carrot cake ones with the vanilla yogurt and water.DE-,LISH!!!! Only 2 points per muffin, but I used the cupcake pan!

    1. I just made them and they come to the top of a regular muffin tin, I made 24 and they work out to 3 smart points.

  12. These were amazing. As a new member I’m so glad to find recipes like this! one note: i am going to add some real lemon and a tsp of lemon zest next time to give them a bit more zing. Poppy seeds would also be nice.

    I calculated the smartpoints at 2 for 32 muffins. Mine made closer to 44 and it was still 2 pts so I’m going to full them slightly fuller next time to get more out of my 2 pts!

  16. Quick question about the lemon muffins. I don’t like Greek yogurt. Can I use regular yogurt to make these with?

    1. You should be able to but it will change the muffins a lot.

      Honestly I am not a greek yogurt fan and you can’t tell that’s what these are made of.

  18. I made this recipe, and they are divine! According to my WW recipe builder, the cake mix (whole box) is 7 smart points and the fat free lemon yogurt I used is 2 sp. So, at a total of 9 points for the batch, that’s a counting value of 1 point each. I made 21 regular-sized muffins, and my hubby loves them too!

  20. I made these and they are really good, but for me anything Lemon is good my husband really likes them too. When I made them I ended up with 48 mini muffins. I tried to enter this into my Weight Watchers app but, didn’t get the info off of the box that has sugar amounts and other required info to get the right calculations. Still want to say thank you for the recipe.

    1. I have not tried to but I am sure you can I would lay them flat in a bag or spread out on a tray to flash freeze them so they don’t stick to each other.

  23. I have figured this using smart points & come up with 7.2 points. 7 points for cake mix & .2 for yogurt. Not sure how everyone is coming up with lesser points. If you take the individual serving info on the side of the box it is for 10 servings. If you multiply by 10 & divide by 24 or 48 I get 7 points.

  24. I would like to make these muffins in a regular size muffin pan instead of a mini size. My question is how long should I bake them

    1. I would start at ten minutes and keep an eye on them. Also make sure you replug your WW points with the new serving number

  25. I’ve tried these MANY times and they are delicious! That being said I do you have a question for all of you out there….
    Has any one tried using muffin liners? Or do you believe it would stick?
    I don’t want to ruin the entire batch of that delicious mix!

      Just made in muffin paper liners and they worked just fine. These are very good. I put some chopped walnuts on top of some. Although, I know that changes the points/calorie count, gave it a nice change. This recipe is a keeper. Thanks!
