Easy Oven Roasted Baby Potatoes

These Oven Roasted Baby Potatoes are going to be one of the easiest side dishes you will ever make! And the whole family will love them as well! They are crispy on the outside but still fluffy on the inside. They are the perfect side dish to any weeknight dinner, and one the whole family will actually get excited about and eat!

I used to be intimidated by roasting potatoes, I know, but truthfully it was any dish, but once I figured out how simple they really are, it’s become part of our meal plan! The bonus is the kids ask for them often, and they pair perfectly with everything from grilled chicken to air fryer salmon. Baby potatoes are a vegetable we pick up at our local farm stand and grocery store in the winter. And once you make them this way you will never go back!

How To Make Roast Baby Potatoes:
Preheat your oven to 375 degrees.
In an over-the-sink strainer, rinse the baby potatoes and let dry them completely.
Wrap a cookie sheet in tin foil
On a cutting board, cut your baby potatoes in half. You could leave them whole but we prefer them cut so you can have a crispy part but still have the inside tenderness. The potatoes will also cook faster cut in half.
Lay out the halves of the potatoes on the cookie sheet. I like the have them cut side down and also cut side up. The choice is yours.
Cut up the green onions
Drizzle the potatoes in avocado oil. You could also put the potatoes in a large mixing bowl to coat them in the seasoning and the oil if you don’t want to drizzle them.

Sprinkle with seasonings, green onions, and parmesan cheese if you want
Bake your baby potatoes in the oven for about 30 to 45 minutes, until they are done; I poke a fork into them to check. Smaller potatoes will take closer to 30 minutes, and larger potatoes will take closer to 45 minutes.

Tips For Making Oven Roasted Baby Potatoes
- You can also make this in the oven at 400-425 degrees. I like cooking at a lower temp for longer; it comes down to personal preference.
- You can swap out the avocado oil with olive oil if you want.
- Swap in Italian seasoning, ranch seasoning, smoked paprika, or any blend.
- You can also make these in the air fryer or the oven.
- These are a good side dish with good macros and also low Weight Watchers points.

Store for up to three days in an airtight container in the fridge.

I typically use my microwave; I prefer fast and easy, but you can also reheat in the oven or the air fryer.

Instructions
- In an over the sink strainer rinse off the baby potaotes and pat them dry
- Preheat your oven to 375 degrees
- Wrap a cookie sheet in tin foil
- On a cutting board cut your baby potatoes in half
- Lay out the halves of the potatoes on the cookie sheet
- Cut up the green onions
- Drizzle the potatoes in avocado oil
- Sprinkle with seasonings, green onions, and parmesan cheese if you want
- Bake in the oven for about 30 to 45 minutes till they are done, I stick a fork softly into mine to tell if they are done or not.
