These Easy Smores cookies were a lifesaver for me recently! It’s that time of year filled when last-minute get-togethers, potlucks, moms’ nights out, school snacks, and everything in between keeps popping up! With time being valuable, our desserts must be quick and easy – or I won’t get anything else done.

Like most moms, my list of things to get done is never-ending! I love that I was able to hit up Costco’s bakery for the cookies, making them that much easier! You could do these with homemade cookies too but I was strapped for time.
Now every year it never fails that we are invited to last-minute get-togethers and parties. These are the easiest desserts to make on short notice, even Kylie has helped me to make them for get-togethers! The best part is I don’t have to bake, I just hit a store and pick up the cookies, not always frugal but it is such a time saver!
Easy S’mores Cookies Ingredients:
Chocolate Chip Cookies-I used Costcos bakery cookie but you can use this with any large chocolate chip cookies, or even
Graham Crackers– I ground mine down in a Ninja but you can also buy ground graham cracker crumbs.
How To Make S’mores Cookies Directions:
Drop the graham crackers into your Ninja Blender (or equivalent). Skip this step if you are using store-bought ground graham cracker crumbs.
Pluse the Ninja Blender until you get the ground graham crackers consistency that you want.
The thinner the crumbs are the less chance of larger chunks of graham crackers.
Spread marshmallow fluff onto half the cookies.
Spread the chocolate frosting onto the remaining cookies.
Sprinkle the chocolate-frosted cookies with graham cracker crumbs.
Assemble your cookies and then roll them like a tire through the remaining graham cracker crumbs to have graham cracker crumbles on the outside of the cookie!!
Place on a platter to serve.
Now my girlfriend from the south called these Smore’s Whopppie pies, which is a name that suits them.
How to store smore’s cookies
If you make them ahead of time, store them in an airtight container on the counter overnight. Putting them in the fridge may harden the marshmallow.
Store in the air-tight container in a Ziploc for up to three days at room temperature. (we rarely have any leftovers after get-togethers
