Easy Air Fryer Zucchini Chips Recipe

These Air Fryer Zucchini Chips are the perfect crispy, crunchy snack you never knew you needed, and a replacement for potato chips! Take thinly sliced zucchini coated in seasoned parmesan breadcrumbs and air fried to golden perfection, these are the healthy chip alternative that actually delivers on flavor and crunch. Low carb, low calorie, macro friendly, and so much better than anything you will find in a bag at the store!

If you have a garden overflowing with zucchini every summer or you just love finding new ways to sneak more vegetables into snack time, this is your new go-to recipe. My family absolutely loves these as an afterschool snack, a game day side, or served alongside burgers and grilled chicken instead of regular chips. They take less than 30 minutes to make, and the air fryer does most of the work!

How To Make Air Fryer Zucchini Chips:
Slice your zucchini into thin slices.

In a bowl, break your egg and whisk up the yolk.
Mix your bread crumbs, parmesan cheese, and seasonings using a second bowl. For this part, I used a fork.
Spray your air fryer racks with a non-stick spray.

Dip a zucchini slice into the egg yolk and make sure it’s fully covered.
Use a fork to lift the egg-covered zucchini into the breading and flip it over until coated.
Place your breading-coated zucchini onto your Air Fryer rack

Repeat until all your zucchini is covered and spread out on the racks.

Once your racks are in your air fryer, close the door and set it to 400 degrees and 20 minutes.

When the timer goes off, ensure your chip is crisp enough to your liking.

Instructions
