Busy weeknights call for easy, family friendly meals, and this Crockpot Cabbage Soup recipe is a winner! It is full of vegetables and is a low calorie, low carb, and keto friendly soup, plus it’s zero points for Weight Watchers. It is rare to find a meal that suits all healthy eating styles but this one does.

When I first joined Weight Watchers in 2011, everyone raved about cabbage soup at the meetings. It was everyone’s go-to for adding more veggies without using up points. I love it because it is also macro-friendly and an easy way to pack in more veggies. Adding protein like chicken or turkey can make it even more filling.

- White Onion-red onion or yellow onion will work fine as well.
- Green Cabbage– I had a 2.7-pound head of cabbage that I cut down. You can cut, shred, or grab bags of shredded cabbage in the produce department.
- Green Beans
- Celery ribs
- Baby Carrots– You can use full-size carrots to peel and cut down
- Red, Yellow, and Orange Bell Pepper–
- Minced Garlic
- Italian Seasoning
- Garlic Salt and Ground Black Pepper
- Chicken Broth– You can replace this with beef broth or vegetable broth.

Slow-Cooker Cabbage Soup Directions
Start by prepping your vegetables that need to be cut and chopped. The smaller the pieces of the vegetables, the faster they will cook in the crockpot. A food processor will shred the cabbage more quickly, or a vegetable chopper will make the prep faster.

Spray your crockpot with a nonstick spray or liner with a slow cooker liner.
I used an 8-quart crockpot to make my soup; I did a large batch so I would have leftovers for lunches and more quick dinners.
Start to put everything in your crockpot. I added the vegetables first, the seasonings, and then the broth.
Turn the crockpot on low and give everything a good mix.

While the soup is cooking, stir it occasionally.
Allow to cook in the crockpot on low for 4-6 hours; mine was done about the five-hour mark.

How To Store Crockpot Cabbage Soup
Allow the soup to cool completely and store in an airtight container. The soup can be kept in the fridge for up to 5 days or frozen for up to 30 days.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

l have kidney stage 3 so l need to watch my potassium, protein, sugar and salt. love l am with weight watcher can you help me with a few recipes?
The recipe indicates that it has 1527 gm sodium per serving.
Is this right it seems awfully high. I notice so many of the soup recipes on weight watchers are high in sodium. How can I adjust the recipes to lower the sodium.

Decrease any salt you put it in and make sure to check the sodium on the broth you use. Hope that helps!
