A good cabbage soup recipe is fantastic comfort food and healthy! Making filling but healthy soups, as a bonus, this cabbage soup is both zero weight watchers points and keto/low carb. I l love to find soup recipes that can be changed so it’s never the same.

When I first joined weight watchers in 2011, everyone talked about the weight loss cabbage soup; WW vegetables are zero points. This soup is a great dinner or lunch to balance higher point meals of the day. Now I like it cause it’s an easy way to eat more veggies too!
WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022 similar to previous plans like WW Smartpoints, with some color plans. ( You can see the Weight Watchers Zero Point Foods 2023 -> here)
No matter the WW plan, they work to help you learn healthy eating habits. I have hit lifetime goal weight several times but stopped operating the plan and tracking, so the weight does creep back on. You stay on as a lifetime member, working towards your goal. Head on over ->here to get a month for free.
Weight watchers cabbage soup recipe Ingredients
White Onion– You can use whichever onion you prefer; red onion or yellow onion will work fine. I had a white onion on hand.
Green Cabbage– I had a 2.7-pound head of cabbage that I cut down. You can cut, shred, or grab bags of shredded cabbage in the produce department.
Green Beans– I used fresh green beans, but you can use frozen or strained canned green beans.
Celery– You can buy celery hearts or just cut down the ribs of a celery stalk. If using a stalk rinse the celery to ensure there is no dirt. If you want it fast and easy, buy pre-cut celery sticks.
Baby Carrots– You can use full-size carrots to peel and cut down, but I just cut baby carrots into half and thirds.
Red, Yellow, and Orange Bell Pepper– You will chop the ends off the pepper, remove the seed stalk, and then dice the exterior of the pepper.
Minced Garlic– Fresh or powdered garlic instead of minced garlic if you would like.
Chicken Broth– You can replace this with beef broth or vegetable broth. Before making the soup, scan your broth to verify it is a zero-point broth.
How To Make slow cooker cabbage Soup
Start by prepping your vegetables that need to be cut and chopped. The smaller the pieces of the vegetables, the faster they will cook in the crockpot. A food processor will shred the cabbage more quickly, or a vegetable chopper will make the prep faster.

Spray your crockpot with a nonstick spray or liner with a slow cooker liner.
Crockpot LinersNonstick Sprays
I used an 8-quart crockpot to make my soup; I did a large batch so I would have leftovers for lunches and more quick dinners.
Start to put everything in your crockpot. I added the vegetables first, the seasonings, and then the broth.
Turn the crockpot on low and give everything a good mix.

While the soup is cooking, stirring occasionally.
Allow to cook in the crockpot on low for 4-6 hours; mine was done about the five-hour mark.

How To Store crockpot cabbage soup
Store in an airtight container in the fridge for up to 5 days or freeze in an airtight container for up to 30 days.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
