Caprese Pasta Salad Recipe

Looking for a fresh twist on pasta salad, you need to try this Caprese Pasta Salad recipe! Now I have gotten this from deli cases before, but there is something about being able to make the dish at home and controlling the ingredients. With the Easter holiday around the corner, I try this once before making for our Easter dinner.

Caprese Pesto Pasta Salad Ingredients
- Sfoglini Reginetti Pasta
- Pesto-I used a jarred Basil Pesto sauce but you can also use a Homemade Pesto Sauce
- Olive Oil
- Salt
- Garlic Powder
- Black Pepper
- Balsamic Vinegar– You can use a white Balsamic Vinegar that won’t color the dressing as much, but the color wasn’t bad in the dressing.
- Grape Tomatoes
- Mini Mozzarella Balls
- Basil Leaves
- Balsamic Glaze– This is optional, but I loved the extra flavor as a garnish to the salad.

What Is Caprese?
This is traditionally an Italian salad made with fresh tomatoes, mozzarella, and basil seasoned with olive oil and salt. Then layered on a plate to serve as a tomato caprese appetizer. It has been compared to the pizza Margherita and has the colors of the Italian flag: green, white, and red.

How To Make Caprese Pasta Salad With Pesto
Start a large pot of water to boil.
The next step is to slice the grape tomatoes in half and shred your basil leaves. I sliced mine lengthwise, but you can cut them however you wish. If the tomatoes are on the larger side, you can quarter them.
When the water has come to a roiling boil drop in the pasta. I used a full box of Sfoglini Reginetti Pasta, which is 12 ounces of pasta.

Once your pasta is cooked, strain in a pasta strainer and allow to cool. If you need it to cool faster, you can put it by an open window or in the fridge.
In a small bowl, combine your olive oil, balsamic vinegar, garlic powder, salt, and black pepper.

Move the pasta into a bowl and combine it with the pasta sauce.
After the pasta is well mixed with the sauce, fold in the tomatoes, basil leaves, and cheese. You can set aside a couple of tomatoes and mozzarella balls to garnish the top.

Drizzle with balsamic glaze and serve! If you are serving later on, you can garnish with the glaze closer to serving time.
How To Store Caprese Pasta Salad Pesto
Store it in an airtight container in the fridge for up to three days after making it.

- 12 Ounce Sfoglini Reginetti Pasta
- 1/3 Cup Pesto Sauce
- 2 Tablespoons Olive Oil
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Garlic Powder
- 1/2 Teaspoon Black Pepper
- 1 Teaspoon Balsamic Vinegar
- 10 Ounce Grape Tomatoes
- 8 Ounce Mini Mozzarella Balls
- Basil Leaves
- Balsamic Glaze
Instructions
- Start a large pot of water to boil.

- Once your pasta is cooked strain in a pasta strainer and allow to cool.

- After the pasta is well mixed fold in the tomatoes, basil leaves, and cheese.
- Drizzle with balsamic glaze and serve!
