Not only is this easy chicken enchilada bake delicious, but it’s Weight Watchers friendly too! It’s a delicious dinner option the whole family enjoys. This Weight Watchers chicken enchilada casserole comes together quickly and easily, so it’s perfect for us busy moms, too.

Joining the Weight Watchers plan doesn’t mean you have to sacrifice great flavor and delicious recipes. And this Weight Watchers’ cheesy chicken enchiladas casserole is a perfect example of that.
It’s a fairly low point meal that is so delicious even my kids love it! And I love it because it’s an easy meal to put together quickly.
Quick, easy, delicious, family-approved, and WW-friendly?! You’ll definitely want to put this chicken enchilada bake in your dinner rotation.

Ingredients for WW Chicken Enchilada Bake
You only need a few simple ingredients to make this easy chicken enchilada bake. And most of them are WW point-friendly below 3 points.
Yellow Corn Tortillas – I used regular corn tortillas, but you can use very thin tortillas. The thin ones will be easier to cut in the casserole dish. There is no point difference.
Enchilada Sauce – You can also use a Homemade Enchilada Sauce
Taco Seasoning – I used my Homemade Taco Seasoning, but you can use a packet of store-bought.
Boneless Skinless Chicken Breasts – I used Crockpot Chicken Taco Meat (It’s zero points); you can use chicken thighs, but that will add points.
Refried Beans – Using 99% fat-free refried beans will lower the point value
Rotel – I used mild but you can use any variation of Rotel
Fiesta Cheese Blend – Reduced fat or fat free cheese will lower the points.

Substitutions & Alterations
For the Chicken – You can use ground chicken or turkey, shredded turkey breast, and ground turkey are zero point options. Ground beef would add in points, but 93% is the lowest point value
For the Black Beans – You can use pinto beans or kidney beans, etc. They are all zero points on Weight Watchers.
For the Rotel With Green Chili – You can swap out for a can of diced tomatoes and a can of diced green chilis
How to Make WW Chicken Enchilada Bake
Before assembling your casserole, cook either shredded or chopped chicken into small pieces. You can also use crockpot shredded chicken or shredded chicken taco meat, I used the shredded crockpot taco meat.
Preheat your oven to 350° F.
Spray a 9×13 casserole pan with a nonstick spray.
Make your Homemade Enchilada Sauce if needed to.
Spread at least 1/3 cup of the enchilada sauce along the bottom of the pan.

Cut 3 of your tortillas in half. Protip: use a pizza cutter for this
In the bottom of the casserole dish, spread out 3 whole tortillas and 3 tortillas halves on top of the sauce.

In a bowl, combine the taco seasoning with the refried beans.
Use a wooden spoon or rubber spatula to spread the beans on top of the tortillas. This was tricky to do don’t worry about it to be perfect.

Strain and rinse your black beans, and place them in a bowl.
Strain the juices from the can of Rotel and add the contents to the bowl with black beans.

Add your chicken to the bowl with the remaining enchilada sauce.
Stir the chicken mixture in the bowl well.

Place half of the chicken mixture evenly on top of the bean-covered tortillas.
Top the chicken mixture with the remaining tortillas. This will be three halves and three whole tortialls.

Spread the remaining chicken mixture on top of the tortillas.
Top evenly with the shredded fiesta cheese.
Bake for 30 minutes.

Weight Watchers Points Breakdown
When portioned to 9 servings, this works out to 3 points per serving using full-fat products for the cheese and beans.

When using products with the lowest fat possible, the servings work out to 2 points. It is up to your level of what you want to swap out for, I never use the reduced-fat cheeses as I don’t consume much dairy and can benefit from it.

How To Store Weight Watchers Chicken Enchilada Casserole
Store leftovers in a well-sealed, airtight container. Stored properly, refrigerated leftover enchilada bake will be at its best for up to 5 days.
To freeze leftovers, allow the casserole to cool completely and place in a freezer-safe bag or container. Remove as much air as possible. Freeze for up to 3 months
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
How To Reheat WW Cheesy Chicken Enchilada Bake
Reheat this Weight Watchers chicken enchilada bake in the microwave on high for 2-3 minutes until heated through completely.
You can also reheat leftovers in a preheated 350° F oven for 10-15 minutes until it’s heated through.
