Crockpot Cheesy Broccoli Potato Soup is a soup that Kylie had at a friendโs house! She has been begging for it for years, and we finally tracked down the recipe. Lately, she has been obsessed with Panera’s broccoli cheese soup, and this homemade option is better for my budget.

Creamy Cheese Broccoli Potato Soup Ingredients:
- Frozen Shredded Hashbrowns
- Chicken Broth-If you wanted to you could swap it out for a vegetable broth but that will change the flavoring of the soup.
- Cream Of Chicken Soup– You could swap out with cream of celery soup, or even cream of potato soup to change the flavor up.
- Yellow Onion
- Cream Cheese– Cube this up to help it melt faster in the recipe and evenly.
- Cheddar Cheese– I used mild cheddar cheese, you could use sharp cheddar cheese if you want to. This comes down to taste preference.
- Diced Hamย – You can use leftover ham from crockpot ham for this or even smoked ham would add amazing flavor to this as well. This time around I used store-bought ham to make this.
- Broccoli– I used fresh broccoli, and there is nothing wrong with using frozen broccoli florets. The frozen broccoli would need to be added frozen or closer to it being done if you warmed it up first. Either way, you want small-chopped broccoli florets for this.

- Black Pepperย
- Butter– Cut this up as well to allow it to melt in the soup smoothly.
How To Make Crockpot Creamy Cheese Broccoli Potato Soup:
Spray your crockpot with a nonstick cooking spray or put it in a crockpot liner bag.ย (If you didnโt know the liners are a thing for easy cleaning up, grab some ->ย hereย on Amazon) (I also used an 8 Quart Crockpot to make mine in like this one ->ย here, but a 6-quart crock pot will work as well)

Make your chicken broth if needed. I personally useย Better Than Bouillonย to make my broth, if not store-bought at a grocery store will work great. ย
Pour your broth into the crockpot and then cube the butter and the cream cheese to drop into your crockpot.ย

Open your can of Cream of Chicken and add it to the crockpot as well.
Dice up the amount of onion you want and put it in the crockpot as well.ย (You could use onion powder in place of this if you would like)

Add in next your frozen hash browns, diced ham, and shredded cheese.ย
Next, shred up your broccoli and add it to the mixture as well.ย

Salt and pepper the soup to your taste.ย
Mix it all up and turn your crockpot on low and allow the broccoli cheddar soup to cook for about 4-5 hours.ย
Serve and enjoy!ย

Immersion Blender Tips:
Use an immersion blender to make this soup and make it soup creamy. This is a great way to hide the broccoli from your kids, one of mine won’t touch vegetables. You can add cup milk, skim milk, or heavy cream to increase the dairy daily values in this soup. If the soup is a thicker soup your kids won’t touch add more milk or cream to give it a thinner consistency. A food processor or regular blender would also do this but be careful of splashing or expanding the soup in it.

Nothing can beat a hot bowl of soup, but toppings can turn this into a loaded broccoli potato soup! Serve this with crusty bread, crackers, or even a slice of ham is perfect for dinner!
How To Store Crock Pot Broccoli Cheese Soup:
Dish the soup into small batches and store it in an airtight container, You can store it in the fridge for 3-4 days or freeze it to be eaten in a couple of months. You will want to thaw and then either microwave reheat or stovetop heat.

Crockpot Creamy Cheese Broccoli Potato Soup is the perfect comfort food! Use frozen shredded hashbrowns to make cooking this soup so easy!! You can add in more cheese to make the soup even cheesier! Almost like a loaded potato soup, you can change it up every time in the slow cooker!
Ingredients
- 30 Ounce Bag of Frozen Shredded Hashbrowns
- 3 Cups Chicken Broth
- 10.5 Ounce Cream Of Chicken Soup
- 1/2 Diced Yellow Onion
- 8 Ounce Cream Cheese
- 1 Cup Cheddar Cheese Shredded
- 8 Ounce Diced Ham
- 1 Floret Broccoli
- Salt
- Pepper
- 1/2 Cups Butter

In the instructions it mentions โ ๐ญ ๐๐ฟ๐ผ๐ฐ๐ฐ๐ผ๐น๐ถ ๐๐น๐ผ๐ฟ๐ฒ๐โโฆI assume that means one bag of Broccoli Florets? Saying just โ ๐ญ ๐๐ฟ๐ผ๐ฐ๐ฐ๐ผ๐น๐ถ ๐๐น๐ผ๐ฟ๐ฒ๐โ in the the ingredient list is confusing & unclear. My personal interpretation of โ๐ญ ๐๐ฟ๐ผ๐ฐ๐ฐ๐ผ๐น๐ถ ๐๐น๐ผ๐ฟ๐ฒ๐โ is just one piece/one floret in the bag โ which I know of course is not correct. Thank you in advance for clarifying. I used the wrong word! A stalk of broccoli but you want the top part, not necessary the bottom part of it. We have made this with frozen broccoli florets as well with no issue. Let me know if you make it and like it!
