Crockpot Cheesy Broccoli Potato Soup is a soup that Kylie had at a friend’s house! She has been begging for it for years, and we finally tracked down the recipe. Lately, she has been obsessed with Panera’s broccoli cheese soup, and this homemade option is better for my budget.

Crockpot Creamy Cheese Broccoli Potato Soup

Nothing screams fall time like getting to use your slow cooker even more! Coming home on chilly days or a cold day to your house smelling amazing and dinner cooked is the best. Especially when the cold weather is rolling in. Plus simple ingredients turn into great recipes with little to no prep work required.

crockpot potato broccoli cheddar soup Ingredients:

Frozen Shredded Hashbrowns

Chicken Broth-If you wanted to you could swap it out for a vegetable broth but that will change the flavoring of the soup.

Cream Of Chicken Soup– You could swap out with cream of celery soup, or even cream of potato soup to change the flavor up.

Yellow Onion

Cream Cheese– Cube this up to help it melt faster in the recipe and evenly.

Cheddar Cheese– I used mild cheddar cheese, you could use sharp cheddar cheese if you want to. This comes down to taste preference.

Diced Ham – You can use leftover ham from crockpot ham for this or even smoked ham would add amazing flavor to this as well. This time around I used store-bought ham to make this.

Broccoli– I used fresh broccoli, and there is nothing wrong with using frozen broccoli florets. The frozen broccoli would need to be added frozen or closer to it being done if you warmed it up first. Either way, you want small-chopped broccoli florets for this.

Salt and Black Pepper 

Butter– Cut this up too to allow it to melt in the soup smoothly.

how to make broccoli potato soup

Spray your crockpot with a nonstick cooking spray, or put it in a crockpot liner bag. (If you didn’t know the liners are a thing for easy cleaning up, grab some -> here on Amazon) (I also used an 8 Quart Crockpot to make mine in like this one -> here, but a 6-quart crock pot will work as well)

Make your chicken broth if needed. I personally use Better Than Bouillon to make my broth, if not store-bought at a grocery store will work great.  

Pour your broth into the crockpot and then cube the butter and the cream cheese to drop into your crockpot.

Open your can of Cream of Chicken and add it to the crockpot as well.

Dice up the amount of onion you want and put it in the crockpot as well. (You could use onion powder in place of this if you would like)

Add in next your frozen hash browns, diced ham, and shredded cheese. 

Next, shred up your broccoli and add it to the mixture as well.

Salt and pepper the soup to your taste. 

Mix it all up and turn your crockpot on low and allow the broccoli cheddar soup to cook for about 4-5 hours.

Immersion Blender Tips:

Use an immersion blender to blend this soup with a creamy, smooth consistency. This is a great way to hide the broccoli from your kids; one of mine won’t touch vegetables. A food processor or regular blender would also do this, but be careful not to splash the soup when hot.

Nothing can beat a hot bowl of soup, but toppings can turn this into a loaded broccoli potato soup! Serve this with crusty bread, crackers, or even a slice of ham is perfect for dinner!

How To Store Crockpot Potato Broccoli Cheddar Soup:

To store leftovers dish the soup into small batches and store it in an airtight container; you can store it in the fridge for 3-4 days or freeze it to be eaten in a couple of months. You will want to thaw and then either microwave reheat or stovetop heat your crockpot cheesy potato soup.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

  1. How much Broccoli do you use for the 𝗖𝗿𝗼𝗰𝗸𝗽𝗼𝘁 𝗖𝗿𝗲𝗮𝗺𝘆 𝗖𝗵𝗲𝗲𝘀𝗲 𝗕𝗿𝗼𝗰𝗰𝗼𝗹𝗶 𝗣𝗼𝘁𝗮𝘁𝗼 𝗦𝗼𝘂𝗽? In the instructions it mentions “ 𝟭 𝗕𝗿𝗼𝗰𝗰𝗼𝗹𝗶 𝗙𝗹𝗼𝗿𝗲𝘁”…I assume that means one bag of Broccoli Florets? Saying just “ 𝟭 𝗕𝗿𝗼𝗰𝗰𝗼𝗹𝗶 𝗙𝗹𝗼𝗿𝗲𝘁” in the the ingredient list is confusing & unclear. My personal interpretation of “𝟭 𝗕𝗿𝗼𝗰𝗰𝗼𝗹𝗶 𝗙𝗹𝗼𝗿𝗲𝘁” is just one piece/one floret in the bag — which I know of course is not correct. Thank you in advance for clarifying. Can’t wait to make this…looks yummy!!

    1. I used the wrong word! A stalk of broccoli but you want the top part, not necessary the bottom part of it. We have made this with frozen broccoli florets as well with no issue. Let me know if you make it and like it!
