It’s the holidays and that means we have had a lot of family gatherings going on! This particular dish is requested by my brother endlessly. I know he asks my mom to make it year round. We have paired it up in the past with all kinds of things from grilled and baked chicken to marinated chicken breasts cooked up on the grill. We made this up to go with marinated grilled chicken breasts on Christmas Eve and even the kids were excited.
Hash Brown Casserole Ingredients
- 1 2lb bag of frozen hash brown potatoes thawed
- ½ cup of melted butter
- 1 can cream of chicken soup (10.75 ounce can)
- 8 ounce container of sour cream
- ½ cup of chopped onion (or we used 3tbsp minced onion in place of fresh onion)
- 2 cups of cheddar cheese
- 1 teaspoon of salt
- ¼ teaspoon of pepper
- 2 cups of crushed cornflakes
- ¼ cup of melted butter (to be used separately from the ½ cup of melted butter)
Hash Brown Casserole Directions:
Preheat your oven to 350 degrees
Start out with a large bowl and mix together the hash browns, ½ cup of melted butter, sour cream, cream of chicken soup, chopped onion, salt, pepper, and cheddar cheese.
Spray the casserole dish with a non-stick spray
Spread the mixture from the large bowl into the casserole dish
On the stove in a medium sized saucepan over medium heat sauté the cornflakes in ¼ cup melted butter and spread over the top of the casserole mixture
Bake in the oven for about 1 hour.
