I love chicken salad, but the mayo can be a point killer. I have been making this Zero-point chicken salad for years, but have not tired of it. Finding foods that are low in points but high in protein is essential to me. Protein helps me remain full longer and also helps fuel my body for workouts.

Lunches are one of those meals for me I struggle with. I either skip it or I end up with high point meals from hitting a drive-thru. Meal prepping and having this chicken salad on hand helps to keep me on track and focused on my goals.

How To Make Chicken Salad Without Mayo
Make your shredded chicken breasts if needed, or use canned chicken. I used Crockpot Shredded Chicken to make mine; I try to make this once a week to always have zero-point chicken on hand.
Shred your chicken. Make your shredded chicken breasts if needed, or use canned chicken.

Measure out the amount of chicken you need.

These meal prep containers from Gald and a food scale are crucial to my meal prepping. This is my food scale -> here. It’s easy to reset and change the units while dishing out food or measuring.
Dice and chop your red onion and celery. You can eliminate these if you want or add more since they are zero points.

In a container, combine all the ingredients.
Spread on bread, eat as is, or eat with crackers.

Alternate Substitutions For Greek Yogurt Chicken Salad
Chicken– You can substitute this with shredded Turkey, if it is shredded turkey breast it will be zero points, or canned tuna.
Greek Yogurt– Swapping out with light mayo, mayonnaise, or miracle whip, but some will add points to the recipe so be sure to recalculate.

Store in the fridge for up to three days after making the salad. I store mine right in the meal prep containers when I make a batch of this. It helps to have preportioned options for lunches, snacks, and dinners. Also easy to grab when you don’t feel like making anything.

(Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

I was a bit dubious, as I am a long time lover of lots of mayo in my chicken salad, but this was quite delicious, and I love the extra hit of protein from the yogurt!
