Dill Pickle Chicken Salad Ingredients
Shredded Chicken- I used shredded crockpot chicken breasts, but you can also do thighs, rotisserie chicken, or canned chicken.
- Nonfat Greek Yogurt
- Dill Pickles
- Cottage Cheese
- Minced Garlic
- Dried Parsley
- Black Pepper
- Dried Chives
- Dried Dill

How To Make Slow Cooked Chicken Shredded
I have a guide here on how to make a large batch of shredded chicken. You can meal-prep enough for the week or freeze it to pull out later!
The CliffsNotes version is to fill your crockpot with chicken breasts and broth. Allow the chicken to cook until it reaches an internal temperature of at least 160 degrees. Remove the chicken from the broth and shred it. Use meat claws or a Kitchen Aid mixer to do so.

How To Make Chicken Salad With Dill Pickles
Prepare your shredded chicken if needed. You can also shred a rotisserie chicken or use a can of chicken.
Add cottage cheese, Greek yogurt, minced garlic, Black Pepper, chives, diIl, and Parsley into your food processor container.

Blend until smooth with your food processor.
I used my Ninja blender to do this. I used the Auto-IQ twice, the first time to ensure it was well blended. After the first time, I used a spatula to scrape the walls and stir from the bottom, then blended it again(no cottage cheese chunks got by me).
Remove your pickles from the jar and cut them up. You could skip this step, but I figured they would blend faster.

Add the cut pieces of pickles to your blended food processor container and blend again.

Add the shredded chicken to a large bowl and pour the creamy dill pickle dressing over it. I liked that this had extra liquid because it meant the chicken wouldn’t dry out.

Mix with a spatula until the chicken is well coated with the pickle dressing.

Serve and enjoy!

You can store the chicken salad in the fridge for up to three days after making it. When I make a batch, I store mine in meal prep containers. It helps to have preportioned options for lunches, snacks, and dinners. Plus, it’s easy to grab when you don’t feel like making anything.

Ingredients
- 1 Pound Shredded Chicken
- 3/4 Cup Nonfat Greek Yogurt
- 1 Cup Dill Pickles
- 3/4 Cup Cottage Cheese
- 1 Teaspoon Minced Garlic
- 1 Teaspoon Black Pepper
- 1 Teaspoon Dried Chives
- 1/2 Teaspoon Dried Dill
- 1 Teaspoon Dried Parsley
Instructions
- Prepare your shredded chicken if needed.
- Add cottage cheese, Greek yogurt, minced garlic, Black Pepper, chives, DIll, and Parsley in your food processor container.
- Blend until smooth.
- Remove your pickles from the jar and cut them up.
- Add the chopped pickles to your food processor container and blend again.
- In a large bowl, add your shredded chicken and then pour the dill pickle dressing over the shredded chicken.
- Mix with a spatula until well coated.
- Serve and enjoy!
