2 Ingredient Pumpkin Cookies Recipe!

These 2 Ingredient Pumpkin Cookies are a fall favorite! Easy to make, full of pumpkin spice flavor, and the perfect easy fall treat to make! Using a spice cake mix to make these cookies make them a breeze to whip up in time.

You can not get any easier then a two ingredient cookies! Pumpkin spice is a favorite of most people I know! Every August we look forward to the pumpkin spice latte being back at Starbucks.

2 Ingredient Weight Cookies Ingredients:

  • Spice Cake Mix– You can swap this out with a different flavor of cake mix, like white or yellow, but the spice adds an excellent flavor to the muffins.
  • Pumpkin-Be sure to use one that doesn’t have extras added to it as this will affect the calories and weight watchers points on the recipe.

Important note: The ingredients listed on the cake mix are not needed for this recipe, just the cake mix powder in the box. Ignore the water amount, eggs, and oil on the box.

How To Make Pumpkin Cookies With Cake Mix:

Preheat your oven to 350 degrees.

Mix spice cake and pumpkin.

The batter will be very thick and can be hard to stir together. I also used a spatula to scrape the bowl as well to make sure no cake mix powder stuck to the bowl.

Scoop onto cookie sheet!! 

Pro-tip: Use a cookie scoop to make the cookie shapes and keep them uniform for sizing.

Bake for about 8-12 minutes.

Use a toothpick to test to see if the cookies are done. The toothpick will come out clean from the middle of the cookie.

Remove to a baking rack and allow to cool.

Ways To Lower The Calories

Using a sugar-free or low-sugar spice cake mix will lower the calories.

You can also use a sugar-free yellow cake mix and add pumpkin spice to lower the calories per cookie.

How To Store Two Ingredient Pumpkin Cookies

Allow the cookies to fully cool off and then store in an airtight container or bag. To keep them fresh, keep them on the counter for about five days.

They can be frozen for 30 to 60 days in an airtight container or freezer bag.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

          1. No. Use plain pumpkin puree otherwise you’ll have to add the points for all the added ingredients in the pumpkin pie mix and the texture will be different.

        1. I used 100% pumpkin and spice cake, no water or anything else. I got 42 cookies out of my batch, but still 2 points each

    I just added the cake mix and no added ingredients other than the pumpkin, It was as she said difficult to stir, if water had been added and mine called for 1 cup of water the batter would have been too loose to become cookies.

    These muffins were absolutely amazing. Can you tell me what the smart point is per muffin on the WW blue plan. I got 12 muffins out of one spice cake mix.

  5. I added 1/2 cup mini semi sweet dark chocolate chips and 1/2 cup of chopped toasted pecans and I came up with 41 cookies. Probably more points for weight watchers but that was not my intention to keep them within points anyway!

I haven’t made these yet but looking at the nutrition numbers – please clarify if this is per cookie or total mix because in the store bought spice cake mix – there is a tonne of sugar, how does this work out for weight watchers (point wise) – sorry, I don’t belong to weight watchers (did in the past when they started the point system), please help me understand! I have one each of type 1 & type 2 diabetics in my family & I have to watch what I bake with!! Thank you!
