Chicken Salad with Apples and Grapes (High Protein, Easy Meal Prep)

This chicken salad with apples and grapes is one of my favorite high protein easy lunches to meal prep for the week. It genuinely keeps you full, and it comes together in about 5 minutes once your chicken is ready. Shredded chicken and coleslaw mix are the base, and the apples, grapes, and poppy seed dressing give it that sweet savory combo that makes it feel like anything but a “diet lunch.” Prep a few containers on Sunday, and your weekday lunches are done.

One of my tricks for staying consistent with a healthy lifestyle is keeping lunch interesting and planning ahead. This salad came into my rotation when I was looking for new ways to use coleslaw mix as a base, and it has immediately become a weekly staple. The crunch of the cabbage, the sweetness of the apple and grapes, and that light poppy seed dressing just work together perfectly.

I personally use the app Myfitnesspal to track my food. I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.
Skinny Chicken Salad With Grapes Ingredients
- Shredded Chicken Breast– You can make this as Crockpot Shredded Chicken, or you can substitute it with canned chicken or shredded rotisserie chicken.
- Cabbage– Using store-bought coleslaw mix makes this so easy to do, but if you want, you can buy heads of cabbage and cut them up.
- Celery– This will be diced to put in the salad
- Red Onion—I love the taste of red onion, but you can substitute it with yellow or white onion if that is your taste preference.
- Red Apple
- Grapes
- Skinny Girl Poppy Seed Dressing
- Everything But The Bagel Seasoning

How To Make Slow Cooked Chicken Shredded
I have a guide here on how to make a large batch of shredded chicken. You can meal-prep enough for the week or freeze it to pull out later!
The CliffsNotes version is to fill your crockpot with chicken breasts and broth. Allow the chicken to cook until it reaches an internal temperature of at least 160 degrees. Remove the chicken from the broth and shred it. Use meat claws or a Kitchen Aid mixer to do so.

How To Make Chicken Cabbage Salad With Grapes And Apples
Make your shredded chicken breasts if needed, or use canned chicken breast.

Dice your apple, grapes, celery, and red onion. If you aren’t using a coleslaw mix, prepare your shredded cabbage.
I used an apple corer to cut my apple and then diced the apple slices.

Use a food scale and measure your ingredients into a bowl with the cabbage as a base. I used meal prep containers for my salads for easy storage and eating.

Top with salad dressing and seasoning.

Alternate Ingredients For Chicken Apple Salad Without Mayo
You can swap almost anything that you would feel would taste amazing in this. Remember to verify if the ingredient is a Zero Points food or low calorie to fit into your macros.
- Cranberries
- Sliced Almonds

- Walnuts
- Pecans
- Apple Cider Vinegar

Macros For No Mayo Chicken Salad With Apples And Grape
When prepared according to the recipe card, the macros are 258 calories, 5 grams of fat, 27 grams of protein, and 25 grams of carbs. This is a high protein recipe!
Weight Watchers Points Breakdown For Chicken Salad With Apples And Celery
The only thing with points in this recipe is the Skinny Girl Poppy Seed Dressing. And even still, you can get a lot of dressing for just one point; I love that the lower serving makes this a Zero Point salad for lunch! If you add other ingredients, be sure to calculate the points.
- 3 Tablespoons is zero Weight Watchers points
- 4-11 Tablespoons if one WW point.

How To Store Chicken Salad With Grapes And Apples
I prep min with out the dressing to store. These will be good for up to two days in your fridge in an air tight container.
