Healthy Ranch Chicken Recipe

This Ranch Cornflake Chicken is a high-protein dinner that is also low in calories and Weight Watchers points. You only need four ingredients to make this chicken, and the crunch is amazing! This is one dinner that your whole family will love!

Chicken is one of those proteins for dinner that the whole family loves and is easy to cook up as well. Using either homemade ranch seasoning or store-bought ranch seasoning and it will pair perfectly with the cereal breading. This is perfect to serve with an easy side of vegetables or salad.

How To Make Baked Chicken With Cornflakes

Preheat oven to 350 degrees.

In a zipper bag, crush cornflakes and combine them with ranch seasoning.

If your chicken breasts are really large, you can cut them down or even into strips if you want.

Coat your chicken breast with sour cream or Nonfat Greek yogurt, and I did mine lightly, just enough to make the seasoning stick to the chicken breast.

Place a breast in the zipper bag and shake to coat in cornflake mixture.

Spray a 9×13 baking dish with a nonstick spray.

Remove the chicken breast from the bag and place it in your pan.

Repeat these steps until all breasts are covered.

Take the remaining cornflake mixture and cover the chicken breasts

Bake for 45 minutes, or until the chicken breast is cooked thoroughly. Use a meat thermometer to verify that the temperature is 165 degrees Fahrenheit or higher.

Allow to rest 3 to 5 minutes before serving. You can see how juicy they turn out, too!!

  1. I’m going to have to say that this is my favorite Weight Watchers chicken recipe. I’ve never tried Weight Watchers, but I DO love a good ranch chicken recipe. Yum!

  2. I’ve done this with minor modifications…ranch seasoning mix packet and the chicken dipped in melted butter or egg wash. Wondering how that changes the point value?

    It was delicious! By accident I grabbed a pack of Ranch Dill Seasoning instead of Regular Ranch Seasoning but it still turned out perfect. Also, instead of Corn Flakes I chose to use roasted vegetable flavored Ritz crackers. Plus I switched sour cream for plane low fat yogurt. Paired it with a kale salad of my own mixing. Yummers, it even taste good as left overs.
