This Weight Watchers Ranch Chicken Recipe is a family favorite!! Saving time and money is essential to my family, and we always look for ways to do so.  Easy dinners do that; thankfully, chicken breasts are 0 points on the Weight Watchers plan.

With being on Weight Watchers, chicken breasts are the perfect protein to base our meals on.  We had made Cornflake Chicken Strips before and decided to make a new variation with the kid’s favorite ranch seasoning!!  I know I am always stalking the meat markdowns at the grocery store. I buy those close dates and freeze them for later on!

WHAT IS Weight Watchers?

When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.

New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.

I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, they work to help you learn healthy eating habits. I have hit lifetime goal weight several times but stopped operating the plan and tracking, so the weight does creep back on.

Weight Watchers Ranch Chicken Ingredients:

  • Sour Cream– Using a lower-fat sour cream will lower the point value for this recipe.
  • Corn Flakes
  • Ranch Seasoning
  • Chicken Breast-I use chicken breasts, so they are 0 Weight Watchers points. You can use chicken thighs; it does change the calories and points.

How To MakeWeight Watchers Ranch Chicken:

Preheat oven to 350 degrees

In a zipper bag, crush cornflakes and combine them with ranch seasoning

Corn Flakes in bag, sour cream in bowl, and chicken breasts on plate.

Coat your chicken breast with sour cream, and I did mine lightly, just enough to make the seasoning stick to the chicken breast.

Place a breast in the zipper bag and shake to coat in cornflake mixture.

Spray a 9×13 baking dish with a nonstick spray. I know my mom is all about her metal pans, but I am all about the Pyrex glass pans!  Clean-up is so much easier out of a glass pan vs. metal for me. I love the one with the handle; the lid makes storing leftovers much easier!

Remove the chicken breast from the bag and place it in your pan.

Repeat these steps until all breasts are covered.

Take the remaining mixture and cover the chicken breasts

Bake for 45 minutes till chicken breast is cooked thoroughly. Use a meat thermometer to verify they are 165 degrees or more.

Be sure you recalculate as points value may vary by brand, and you can lower the point on this by using low-fat sour cream. This is the breakdown for the batch I made and the ingredients we used.

What to serve with healthy ranch chicken recipe

The side dish doesn’t matter, but if you are having a higher point day, you will want to go fo a low point side dish, but if you have a lot of zero point foods, you can have a higher point value side dish with this.

Side Dishes: Air Fryer Bacon Asparagus, Garlic Mashed Potatoes, Oven Roasted Baby Potatoes, Air Fryer Brussell Sprouts, Green Beans, Ceasar Salad, Acorn Squash, Green Salad, Baked Sweet Potatoes, Steamed Broccoli, Grilled Zucchini, Grilled Corn On The Cob, Air Fryer Zucchini Chips

How To Store Ranch Chicken with corn flakes

Allow to cool down completely. Store in an air-tight container or ziploc bag in the fridge for up to three days.

Equipment

  • Pyrex 9X13
  • Mixing Bowl
  • Rolling Pin
  • Nonstick Spray

Ingredients

  • 1/2 Cup Sour Cream
  • 2 Cups Corn Flakes

  • 1 Pound boneless skinless chicken breasts

Instructions

    I’m going to have to say that this is my favorite Weight Watchers chicken recipe. I’ve never tried Weight Watchers, but I DO love a good ranch chicken recipe. Yum!

    I’ve done this with minor modifications…ranch seasoning mix packet and the chicken dipped in melted butter or egg wash. Wondering how that changes the point value?

    We love fried chicken but it’s a mess to clean up and of course so high in fat! This is a great alternative and has all the satisfaction of the crunch!

    It was delicious! By accident I grabbed a pack of Ranch Dill Seasoning instead of Regular Ranch Seasoning but it still turned out perfect. Also, instead of Corn Flakes I chose to use roasted vegetable flavored Ritz crackers. Plus I switched sour cream for plane low fat yogurt. Paired it with a kale salad of my own mixing. Yummers, it even taste good as left overs.
