With being on Weight Watchers chicken breasts is the perfect protein to base our meals off of. We have made Cornflake Chicken Strips before and decided to make a new variation with the kid’s favorite ranch seasoning!! I know I am always stalking the meat markdowns at the grocery store I buy those close date and freeze them for later on!

Weight Watchers Ranch Chicken Recipe Ingredients:

- 1/2 Cup Sour Cream
- 2 Cups Corn Flakes
- 6 Tbsp Ranch Seasoning
- 1lb Chicken Breast

How To MakeWeight Watchers Ranch Chicken:
Preheat oven to 350 degrees
In a zipper bag crush cornflakes and combine with ranch seasoning
Coat your chicken breast sour cream, I did mine lightly just enough to make the seasoning stick to the chicken breast.
Place a breast in the zipper bag and shake to coat in cornflake mixture
Spray a 9×13 baking dish with a nonstick spray (I use my -> Homemade Nonstick Spray) Now I know my mom is all about her metal pans but I am all about the Pyrex glass pans! Clean up is so much easier out of a glass pan vs metal for me I am not sure why but it works!!! I love the one with the handle and the lid makes storing leftovers so much easier!

Remove the chicken breast from the bag and place in your pan
Repeat these steps until all breasts are covered
Take the remaining mixture and cover the chicken breasts
Bake for 45 minutes till chicken breast is cooked thoroughly
You can see how juicy they turn out too!!
The Old Points Plus Point value.
Be sure you recalculate as points value may vary by brand and you can lower the point on this by using low-fat sour cream. The old Smartpoints value or green plan.
Now with the Freestyle Smartpoints on blue or purple, it works out a bit different since chicken is now zero points!
Now, this is the breakdown for the batch I just made and the ingredients that we used. I did end up tracking my chicken as 6 Weight Watchers smart points because I knew I didn’t use all of the sour cream and corn flakes on the chicken. This is a recipe that has some wiggle room so you can use your judgment when it comes to assigning your points.

Weight Watchers Ranch Chicken is a favorite with my whole family plus it is low Weight Watchers Points Plus Value and decent Weight Watchers Smart Points.
Ingredients

I’ve done this with minor modifications…ranch seasoning mix packet and the chicken dipped in melted butter or egg wash. Wondering how that changes the point value?

You can it will change the taste. I’ve tried cooking with it and personally didn’t care for it.

It was delicious! By accident I grabbed a pack of Ranch Dill Seasoning instead of Regular Ranch Seasoning but it still turned out perfect. Also, instead of Corn Flakes I chose to use roasted vegetable flavored Ritz crackers. Plus I switched sour cream for plane low fat yogurt. Paired it with a kale salad of my own mixing. Yummers, it even taste good as left overs.
