Homemade Chicken Caesar Salad Recipe

This low point chicken caesar salad is going to be on a constant rotation in your meal plan. It’s easy to make, absolutely delicious, and goes with just about everything. Or have a big old bowl or wrap for a meal on its own. Even my kids ask for this simple chicken caesar at least twice a week!

I’m not usually much for salads, but this Chicken Caesar Salad is one of those perfect dishes that is great as a starter, a side, as a big meal on its own, or in a wrap with a side of air fryer roasted potatoes. 

You can eat this salad for lunch, dinner, or as a light afternoon snack to hold you over. Other zero point veggies like grape tomatoes and thin sliced red onion for even more great flavor when added.

This chicken Caesar salad is simple to make and hard to resist. Even my kids love it. The best part is that you can swap out the dressings for low-point options or low-calorie options.

(Use a calculator like this -> here)  . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

What is a Caesar Salad?

Caesar salad is a combination of green lettuce, usually Romaine, tossed in a creamy dressing made of olive oil, eggs, garlic, Worcestershire sauce and/or anchovies, Parmesan cheese, Dijon mustard, and fresh, cracked black pepper.

The salad’s name comes from its creator, Caesar Cardini, an Italian immigrant who created the recipe in his restaurant Caesar’s in the 1920s. The belief that the salad is named for the Roman emperor is a common misconception.

The Best Weight Watchers Caesar Salad Dressings

Caesar salad dressing is made with anchovies or anchovy paste, Garlic, lemon juice, dijon mustard, Worcestershire sauce, mayonnaise, cheese, parmesan cheese, salt, and pepper. Finding one low point on WW isn’t too hard; the main things with points are the mayo and the cheese.

Ingredients for WW Chicken Caesar

This recipe only calls for a handful of simple ingredients.

Chicken Breast – I used my Zero Point Weight Watchers Air Fryer Chicken Breast, you can use precooked diced chicken just be sure to scan it using your app to make sure it is zero points.

Parmesan Cheese – I like to use freshly shaved parmesan cheese 

Romaine Lettuce – You can cut your own or use pre-cut lettuce from the store

Caesar Salad Dressing -You can make your own homemade Caesar dressing or use a low-point or low-calorie bottled dressing from above.

Substitutions & Alterations

  • Adding croutons or cheese will add WW points and calories to the salad.
  • Kraft Parmesan Cheese is a good low point substitute if you like it 
  • Use chicken breasts and proteins with zero points or low points.
  • Grilled shrimp is a great alternative for a shrimp caesar.

  • Add some kale, spinach, or arugula for more greens.

  • If you are allergic to or avoid fish, look for a dressing that is anchovy-free.
  • Many Caesar dressings also contain egg or egg yolks. Look for an egg-free option if you are allergic.

How to Make Caesar Salad 

The instructions for this simple salad couldn’t be easier. Gather and combine your ingredients, add the dressing, stir to mix, and serve.

Cook your chicken and place on a cutting board to cool. I made this using my Zero Point Air Fryer Chicken breast, which I just cut into bite-size pieces. (You can get the recipe -> here)

You can also use store-bought pre-grilled chicken slices or rotisserie chicken pieces.

Assemble your salad. Combine the lettuce, chicken, and all other optional ingredients into a large bowl.

Drizzle your dressing over the ingredients to your taste and toss or mix gently with a rubber spatula or pair of tongs to combine. 

Pro Tip: to control the dressing if watching your calorie intake dip the salad into a thing of dressing you may find you use less dressing this way.

Tips & Tricks

  • Use a food scale to get an accurate measuring of cheese and salad dressing 
  • Add a couple of tablespoons of lemon juice and a teaspoon of kosher salt and garlic powder to bring out the flavors of the salad
  • Add other zero-point options like red onion, tomatoes, cucumbers, etc., to bulk up the salad and add even more great flavor without adding extra points.
  • If you use croutons, add them after mixing and bowl the salad so they don’t get soggy.
  • If you are allergic to or avoid fish, look for an anchovy-free dressing.

How to Serve Chicken Caesar Salad

You can serve this chicken Caesar salad in a variety of ways.

Serve it in a large portion size as a meal on its own. Or serve it as a side salad with some of these great options.

How to Store Leftover Salad

Store leftover Caesar salad in a proper-sized, airtight container. The salad should reach the top of the container, ensuring minimal air in it. I only add the dressing when I am ready to eat to ensure the croutons don’t get soggy.

Stored properly, leftover Caesar will be in the refrigerator for 4-5 days.
