These Strawberry muffins are the perfect treat for when you’re craving a quick and easy treat. They are made with only three simple ingredients: strawberry cake mix, strawberry Greek yogurt, and water. They are easy to whip up a batch, and they are also low in Weight Watchers points and calories.

These muffins are perfect for breakfast, an easy dessert, or for throwing in the kids’ lunches. They will satisfy a sweet tooth and are the ideal light treat. With three ingredients, they are perfect to make with kids in the kitchen as well!

The ingredients for these strawberry yogurt muffins are simple and plus they are easy to whip up. These can also be made into bigger muffins, but our favorite is mini muffins!

Strawberry Weight Watchers Muffins Recipe Ingredients:
- Strawberry Cake Mix– I used a Betty Crocker Strawberry mix to make this. You could swap out with a white as long as it is made with strawberry Greek yogurt.
- Nonfat Strawberry Greek Yogurt– Using nonfat Greek yogurt will lower the Weight Watchers and calories of the muffins.
- Cup of water
**Note you will not use any of the other ingredients listed on the box just the powder so no oil or eggs**

How To Make Strawberry Muffins From Cake Mix
Turn your oven on to preheat to 350 degrees.
In a mixing bowl, mix the yogurt and water. I do this first to make sure they are combined thoroughly.
Next, slowly add the dry cake mix to the water and yogurt mixture in the bowl.
Wet a paper towel with vegetable oil and rub your silicone muffin Pan with the paper towel. This will grease the pan, allowing your muffins to pop out quickly once baked.
I use a cookie scoop to fill the baking cups about half full. These muffins do raise quite a bit. (This is a picture from the pumpkin ones)

Bake for approximately 15-22 minutes, depending on your oven’s temperature. I use a toothpick to check the doneness of the muffins.
You can also make a strawberry yogurt cake using a smaller cake pan or larger muffins.
Serve and enjoy!!

There is no right or wrong answer, as all bodies are different.

- 1 Cup Water
Instructions

What is the carbs per serving?
As many as the cake mix says and add the yogurt carbs. to that..so my guesstimate would be at least 30g per serving. How this a “weight watcher” recipe is beyond me they took out the only 2 things that have no carbs…..

I use the single serving of greek yogurt cups.
What brand of yogurt do you use? Or how many oz. do you use?
I see it shows 4 oz on the recipe that you can print off. which they used one that was 100 calorie.
I used Betty Crocker delights super moist strawberry cake mix and a light 90 calorie yogurt will this change anything?
That sounds like the mixes I used, I would just plug everything into E-tools to make sure you get the right points

I love these, but I will not be making them any longer. After putting the ingredients through the WW Recipe Builder I learned they were 7SP each, not 2.
Did you use the mini muffin? The points will vary based off of how many muffins your batch makes
Should they stay in fridge?
I keep them in a container on the counter. You could keep them in the fridge.
Why not just use a cake mix of your choice with a diet soda instead of yogurt and water? Cuts down points if you use a sugar free cake mix.

First, these are amazing! It was my first Weight Watchers recipe. Taste just like my favorite thing at Eat ‘n Park.
Second, because of your link to a free month of Weight Watchers I decided to try it. I am a very picky eater and have IBS so all diets have been too hard for me until now. I have been able to eat more things on this diet and I’ve lost 6 pounds in only a few days. I can’t wait to lose more.
How many points if it makes 12 muffins?

I store mine on the counter in a large Rubbermaid container.
These are delicious but NOT 1 OR 2 SP like you say they are ….they are 7 according to the WW app.
It depends on how many muffins you get. If you use the bigger muffin pans they are more points.
I just put the recipe in recipe maker and it says they are 0 points in the WW app.
Make sure you increase the number of servings on the cake mix to account for the full box before dividing out how many muffins you get.
I put my ingredients in and the result was 1 sm per muffin
Can you do a cake out of this instead of muffins? Would it change anything?
It would change the point value for servings. So be sure to plug it into the recipe builder with the serving amounts you cut the cake into.

How long do you bake larger muffins for?
I would check them at 18 minutes to see how done they are by using a toothpick. I haven’t made them in a larger size in a couple of years to remember the time off the top of my head
