2 Ingredient Crock Pot Chicken Tacos

These 2 Ingredient Crock Pot Chicken Tacos are one of my family’s favorite go-to’s for Taco Tuesday! Now you can’t beat Taco Tuesday, but making it even easier to make is a total win in this mom’s book. I love that with Weight Watchers, boneless skinless chicken breasts are zero points.

Weeknights are busy, too, so having an easy dinner is a must! Crockpots are my favorite in the fall aka soccer months!! Taco Tuesday is the kid’s favorite and easy to make as well! As long as you use a zero-point salsa, this will be Zero Weight Watchers points.

I personally use the app Myfitnesspal to track my food. I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

- Boneless Skinless Chicken Breasts– You could use other variations of boneless chicken, but the thighs will make for tougher meat and more grease in the crock.
- Salsa

How To Make 2 Ingredient Crock Pot Chicken Tacos:
Spray the inside of the crockpot with a nonstick cooking spray. If you want a crockpot liner also makes for a fast clean up as well.
Crockpot Liners
Trim any excess fat off your chicken breasts before placing them in the crockpot. I used my 4.5-quart crockpot to make this, but when doing large batches for leftovers I use my 6-quart or 8-quarts.

Pour the salsa over the chicken breast.

Give everything a quick stir to make sure the chicken is coated.
Cover with crockpot with lid and cook on low for about 4-6 hours or until chicken is cooked through.
Use a meat thermometer to ensure the chicken breasts have cooked to 165 degrees.
Using a spoon, remove the salsa chicken breasts from the crockpot and place them into a kitchen stand mixer. If you don’t have a kitchen stand mixer, you can use meat claws or a mixing bowl with a hand mixer.

Using the paddle attachment, set it on slow and allow it to shred the chicken. *
If you want a finely shredded chicken allow it to mix longer, and be sure to stand over it to watch so you don’t shred the meat too fine. See my post -> here for more tips on shredding chicken.

If the chicken seems dry you can always add in more juice from the crockpot, plus it will also add more flavor to the chicken!
Serve with all your favorite taco toppings and don’t forget the chips and Pace salsa on the side!

How To Store Leftover crock pot chicken taco meat
Store in the fridge in an air-tight container or bag for up to 5 days. You can freeze this meat in a container or bag for up to three months after you cook the chicken.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

- Pour the Pace Sauce or Salsa over the chicken breast. Give everything a quick stir to make sure everything is coated
- Cover with crock pot with lid and cook on low for about 4-6 hours or until chicken is cooked through
- Using a spoon, remove the chicken breasts from the crock pot and place them into a kitchen stand mixer
- Using the paddle attachment set it on slow and allow it to shred the chicken
- Serve and enjoy!!
