Instant Pot Shredded Chicken Tacos are a time saver on Taco Tuesday!! Is there anything better than that day of the week?? This is so easy to make. It can be made in a hotel room and is perfect to bring for cooking for kids in the room!

This will be the main way I do our shredded chicken for tacos from here on out! Taco Tuesday is a hit in our house, even if it falls on a Thursday! This can be made in any size of Instant Pot and almost any amount. Plus these work out to be a Zero points weight Watchers food as well!

WHAT IS Weight Watchers?

When starting any new weight loss program or diet changes be sure to consult with a doctor or physician about any personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.

New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly allowance, which is handy when you need more points.

I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, blue plan, green plan, purple plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022 is similar to previous plans like WW Smartpoints, with some color plans.

No matter the WW plan, they work to help you learn healthy eating habits. I have hit lifetime goal weight a couple of times but stopped operating the plan and tracking, so the weight does creep back on. You do stay on as a lifetime member, just working towards goal. Instant Pot Shredded Chicken Tacos Ingredients:

  • Chicken Breasts– I used boneless skinless chicken breasts for this recipe. I find they shred for this type of food well and also don’t make more grease when cooking as thighs would.
  • Taco Seasoning– I use my Homemade Taco seasoning more than store-bought.
  • Fajita Seasoning
  • Minced Garlic
  • Minced Onion 
 

How To Make Instant Pot Shredded Chicken Tacos:

Add about 1/2 a cup of water into the Instant Pot Liner

Turn the Instant Pot on to saute to start to warm up the pot

Boneless chicken breasts seasoned for Instant pot tacos

Season your chicken as desired

Press manual pressure and press the + sign up to 15

Close the lid and allow to cook

Remove the chicken and shred it; you can use bear claws. We used scissors from a knife block, do whatever method works for you.

Ingredients

  • 5 Pounds boneless skinless chicken breasts
  • Taco Seasoning
  • Fajita Seasoning
  • Garlic Granulated
  • Minced onion

Instructions

  1. Add about 1/2 a cup of water into the Instant Pot Liner
  2. Turn the Instant Pot on to saute to start to warm up the pot
  3. Season your chicken as desired
  4. Press manual pressure and press the + sign up to 15
  5. Close the lid and allow to cook
  6. Once done shred your chicken in the pot with either meat claws or kitchen scissors (all we had was the scissors that were in the knife block)
  7. Serve up on your tacos and enjoy!!

Recipe Notes

We had almost five pounds of chicken. You may need to lower cook time if making less chicken
