This Slow Cooker Pork Roast With Vegetables Recipe is one of my favorite home-cooked comfort meals. The pork turns out so tender, and the vegetables are cooked to perfection! This is perfect for feeding just your family, hosting people, or needing a set-it-and-forget-it dinner! It warms the heart and the home, but it also makes the house smell amazing at the same time!

She is on her second round of braces—cooked carrots are one of her favorites to enjoy, and the meat is so tender she can eat it easily. Plus, the leftovers are a bonus, often tasting even better the next day!

Pork Shoulder Roast– I love to use pork roasts with bone for this; the meat just falls apart as it cooks. If you use boneless roast, it will cook just fine.
Vegetable Broth– I used Better Than Boullion Vegetable Base to make my broth, I love the flavor and how easy it is to make.

How to Make Pork Roast With Vegetables In Crock Pot
Spray your crockpot with a nonstick spray now I cooked this in an 8-quart Crockpot and used an 8lb Pork Shoulder Roast. For easy cleanup, you can use slow cooker liners in the crockpot when making this.
Crockpot Liners
I got an amazing deal at Safeway and picked up this rost for $.99 a pound! If you haven’t seen a pork shoulder roast this is what it looks like in the store.

Set the roast in the bottom of the crockpot.
Chop up your potatoes, onions, celery, and carrots into smaller pieces.
Start to pack the vegetables around the roast in the crockpot. With picky kids, I prefer to leave my celery and onions in bigger chunks for them to pick out.
Season with salt, pepper, minced garlic, and seasonings.

I used Better Than Bouillon Vegetable Base to make mine, but you can use canned vegetable broth. Heat your water if need and then add in your better-than-bullion base, and mix in the bowl until the base has dissolved all the way.
Pour the broth mixture all over the pork shoulder roast and vegetables, you will want to have a good amount of broth.
Turn your crockpot on low and allow it to cook for 6 to 8 hours.

How To Reheat Leftover Pork Roast With Vegetables
In the microwave, reheat until heated enough to eat; you may need to mix it a couple of times while heating to ensure it heats thoroughly.
On the stovetop, in a small saucepan on medium-low heat. Be sure to stir often to allow it to reheat evenly.
In a crockpot, allow it to be reheated on low till it is adequately heated. I love this little lunchbox crockpot. I will put my leftovers in it and allow it to be reheated in the morning.
