 This Easy Summer Vegetable Stir Fry Recipe is an absolute favorite of mine! Summer vegetables are my favorite; they make it easy to stay on track with the plan. Easy side dishes are perfect to whip up for dinner.

Now I love cooking in my wok; I wasn’t sold on it until I got a free one from Safeway a couple of years ago.  I’ve realized that I want one with a lid. But it is perfect for quick meat, noodle dinners, and this vegetable stir fry! 

WHAT IS Weight Watchers?

When starting any new weight loss program or diet changes be sure to consult with a doctor or physician about any personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.

New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly allowance, which is handy when you need more points.

I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, blue plan, green plan, purple plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022 is similar to previous plans like WW Smartpoints, with some color plans.

No matter the WW plan, they work to help you learn healthy eating habits. I have hit lifetime goal weight a couple of times but stopped operating the plan and tracking, so the weight does creep back on. You do stay on as a lifetime member, just working towards goal. Vegetable Stir Fry Recipe Ingredients:

  • Olive Oil
  • Trader Joes Garlic Salt Grinder
  • Fresh Ground Black Peper 
  • Zucchini
  • Red Onion 
  • Aloha Peppers  

How To Make Vegetable Stir Fry:

Cut and prep your veggies.

If you are using peppers, we chose to deseed ours; the Aloha Peppers had a tasty flavor. We have also used red and orange peppers in this before.

Rinse off your sliced veggies in a strainer and allow them to drip dry.

Warm your oil in your pan on medium heat.

Once your oil is warmed, drop in your veggies. 

Season to taste with your garlic salt and black pepper. 

Stir occasionally for about 10 minutes until the veggies are cooked but crisp.

Now, if you are on WW, AKA Weight Watchers, this works out to zero points! 1 Tablespoon of Olive Oil is four points, so six servings mean a serving is zero points. 

Double-check your freestyle smart point values for the amount you eat and prepare!

Recipe Notes

*You can stir in chow mein noodles, rice, meat, or other veggies to change it up.  We have added in mushrooms, yellow squash, and asparagus to this before.*
