Easy Summer Vegetable Stir Fry Recipe

The side dish can be a part of meal planning that stumps me, but this easy vegetable stir fry is perfect for any time of year. It’s a recipe that takes vegetables and whips them into a side. You can use vegetables on hand, from the market, or even from the garden. If you are trying to eat more veggies or just want a fresh side dish, this is one to make.

As the house chef, what I love most about this recipe is how flexible and easy it is. There are no sauces, little prep, and no complicated ingredients. Just toss your veggies in a hot skillet, add a little seasoning, and let them cook until they’re perfectly crisp and tender. This works as a fresh side for a lighter meal, or you can even use it in your meal prep! Â

I personally use the app Myfitnesspal to track my food. I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

- Olive Oil
- Trader Joes Garlic Salt Grinder
- Fresh Ground Black PepperÂ
- Zucchini
- Red Onion
- Aloha Peppers

How To Make Vegetable Stir Fry:
Cut and prep your veggies.
If you are using peppers, we chose to deseed ours; the Aloha Peppers had a tasty flavor. We have also used red and orange peppers in this before.
Rinse off your sliced veggies in a strainer and allow them to dry.Â

Warm your oil in your pan on medium heat.
Once your oil is warmed, drop in your veggies.
Season to taste with your garlic salt and black pepper.
Stir occasionally for about 10 minutes until the veggies are cooked but crisp.
Now I made this in a wok, I feel like the wok does a great job of allowing the vegetables to tenderize while not keeping everything directly on the heat. A skillet pan will work if that’s all you have, or even a stock pot. The wok, in my opinion, is an underutilized pan.

Weight Watchers Points For Vegetable Stir Fry
Now, if you are on WW, AKA Weight Watchers, this works out to zero points! 1 Tablespoon of Olive Oil is four points, so six servings mean a serving is zero points.
Be sure to check points against the current program as programs do change, using your calculator on the WW App.
Macros for Vegetable Stir Fry
Macros are 56 calories, 8 grams of carbs, 3 grams of fat, and 2 grams of protein. Now this will vary depending gon the weights and size of servings of the vegetables you are using. Use a calculator to plug yours in.
Now, for me, I don’t track this. The carbs aren’t huge or the fat. I didn’t get to the point of needing to track by eating vegetables. However, your body’s story and needs are different so do you and track what you need to.

Instructions
