This Slow Cooker Chicken Fajita Soup is perfect for any chilly day!! Truthfully, is there anything better in this cold, dreary weather than soup?? It can be so hard to find a soup that is low points with some of the ingredients added in, so when a girlfriend shared her keto recipe Chicken Fajita Soup, I plugged it in to find it was a 0 Point Weight Watchers soup as well!

Now the weather has been dreary, and I love how my crockpot makes my whole house smell heavenly. Nothing beats running to the store and walking in the door with the smell of food cooking in the crockpot.

(Use a calculator like this -> here)  . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

How To Make Crockpot Chicken Fajita Soup

You can do your chicken breast in several ways. I have a bit of an obsession with grilling the chicken that goes into any soup.  (I did it with my Homemade Chicken Noodle Soup -> here).  The easiest way is to pick up a rotisserie chicken or use crockpot shredded chicken.  (you can see more -> here)

At about seven that morning, I coated 2 Chicken breasts with olive oil and sprinkled some Kinders Tequila Lime Seasoning.  I placed them back in the fridge to marinate until I started prepping for the crockpot.

Start by throwing your chicken breast on the grill on low heat.  You will want to flip them a couple of times but not thoroughly cook them so they can finish cooking in the crockpot.  But the grilled flavor that this adds to the soup is fantastic!!!

Begin to prep up the other ingredients for your soup.  I started by chopping up all the veggies and cilantro to put in the soup.  Now a good knife is a must-have in any kitchen! I picked up my favorite one for under $10 on Amazon.

Using my 8-quart crock means I have space to make a batch big enough to have the leftovers!!

Spray your crockpot with a nonstick spray, and start to throw everything in.  Next, I added my broth and everything else; you can add more if it looks like you need more. You could use a slow cooker liner for easy cleanup as well.

After a couple of hours, pull the chicken breasts out of the soup and shred them up.  I used my claws to shred the meat quickly on a plate and then place it back into the soup to finish the rest of the cooking in the crockpot.

I had my soup in the crockpot for about 6 hours before we ate it.

How To Store Fajita Soup

Pour the remaining taco soup into an air-tight container or put it in a Ziploc bag. Store in the fridge for up to three days.

This soup can be frozen for up to three months in the freezer in an air-tight container.

How To Reheat Fajita Soup

You can reheat it in the microwave or stovetop from the fridge.

Frozen soup will need to be thawed before reheating, and You can allow the soup to thaw in the fridge or use your microwave settings. Then reheat in the microwave or on the stovetop.

Since the soup is zero points and low caloriers, you can add more toppings; low-fat options will keep the points of those soup add-ins down, but add tasty flavor.

  • Salsa
  • Hot Sauce
  • Chopped Fresh Cilantro
  • Diced Avocado or Sliced Avocado
  • Tortilla Chips
  • Dollop of Sour Cream: Fat-free sour cream will reduce the points added to the soup.
  • Cheddar Cheese- Using a reduced-fat cheddar cheese is an excellent way to lower the points of this extra add-on to the soup.
  • Sliced Jalapenos

Sides For Chicken Fajita Soup:

Since the soup, you can pair it with more low-fat options or a higher-point food option without using a lot of your point allowance.

As with any recipe, make sure you plug it into your calculator to know what the nutrition values are to track.

  1. If using Rotisserie Chicken, do you add it at the beginning since it is already cooked? Thank you for sharing the recipe, I am looking forward to trying it!

  2. While the recipe as printed has no points, rotisserie chicken has 4 points per 3 oz. A whole chicken would have 12 or more! Also olive oil has one point in each teaspoon. If you are using it to coat chicken, you have to count it. This is low in points, but not zero.

    1. I used chicken breasts to make mine. The amount of olive oil I used to help the seasoning stick spread over the seasonings worked out to zero points for individual servings.
