Now the weather has been dreary and I love how my crockpot makes my whole house smell heavenly. Nothing beats running to the store and walking in the door with the smell of food cooking in the crockpot.

- 3-4 Boneless Skinless Chicken Breasts
- Onion
- 3 Tsp Minced Garlic
- Green Onions
- 1/2 Teaspoon Cumin

Slow Cooker Chicken Fajita Soup Directions:
You can do your chicken breast in several different ways I have a bit of an obsession with grilling my chicken that goes into any soup. (I did it with my Homemade Chicken Noodle Soup -> here). Now the easiest way is to pick up a rotisserie chicken or use crockpot shredded chicken. (you can see more -> here)
At about 7 that morning I coated 2 Chicken breasts with some olive oil and sprinkled on some Kinders Tequila Lime Seasoning on them. I place them back in the fridge to marinate a bit until I was ready to start prepping for the crockpot.
Start out by throwing your chicken breast on the grill on low heat. You will want to flip them a couple of times but not fully cook so they can finish cooking in the crockpot. But the grill flavor that this adds to the soup is amazing!!!
Begin to prep up the other ingredients for your soup. I started by chopping up all the veggies and cilantro to put in the soup. Now a good knife is a must-have in any kitchen! I picked up this Aicok Knife (HERE)for under $10, but it’s keeps going out of stock often on Amazon due to how awesome it is. There are a lot of other top-rated knives on Amazon at a great price. I am not the best at picking out Knives so when I can read reviews to find a good quality knife it’s a win for me.

Spray your crockpot with a nonstick spray and start to throw everything in. Next, I added in my broth first then added everything else, you can add more broth if it looks like you need more.
After a couple of hours pull the chicken breasts out of the soup and shred them up. I used my claws to shred the meat quickly on a plate and then place back into the soup to finish off the rest of the time cooking the crockpot.
I had my soup in the crockpot for about 6 hours before we ate it. You can add some flour to thicken it up and eat with some sour cream or even chips! However we at this as is, and it was zero WW smart points as well.

Yes I would add it at the beginning. That way it gets the flavor and adds flavor to the soup as well.

How much chicken stock do you use?

While the recipe as printed has no points, rotisserie chicken has 4 points per 3 oz. A whole chicken would have 12 or more! Also olive oil has one point in each teaspoon. If you are using it to coat chicken, you have to count it. This is low in points, but not zero.

I used chicken breasts to make mine. The amount of olive oil I used to help the seasoning stick spread over the seasonings worked out to zero points for individual servings.
