This Weight Watchers chicken enchilada soup recipe may have 0 points but it has a ton of flavor. And it’s perfect for the whole family. My kids get a delicious meal they love, and because the whole thing is made in the crockpot, this mom gets a tasty, zero-point meal and a bunch of extra time.

I may be on the Weight Watchers plan, but that doesn’t mean I’m going to sacrifice great flavor in the recipes I make for myself and my family. And you don’t have to either.
Take this chicken enchilada crockpot soup for example. It has zero points but is absolutely packed with great flavor everyone loves.
And because it’s made in the crockpot, I can get ahead with my busy mom schedule and still give my kids a delicious meal they absolutely rave about!
WHAT IS Weight Watchers?
When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.
New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.
I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.

Skinny Chicken Enchilada Ingredients
Boneless Skinless Chicken Breasts – I used Crockpot Chicken Taco Meat (It’s zero points); you can use chicken thighs, but that will add points.
Whole Kernel Corn – you can use canned or frozen.
Enchilada Sauce – You can also use a Homemade Enchilada Sauce
Chicken Broth – Use reduced-sodium to reduce the point value. Mine had a bit when I made this recipe since I was out of low-sodium.
Rotel With Green Chili – You can swap out for a can of diced tomatoes and a can of diced green chilis
Fresh Cilantro – divided for soup and garnish
Chili Powder – You can use light or dark chili powder.
Salt and Black Pepper
How to Make Crockpot Enchilada Soup
Dice up your onion and cilantro. Now I cheated and used pre-cut cilantro fresh leaves, cutting herbs is not my strong suit. You can use dried cilantro but the flavoring won’t be as strong.
I used my 8 Quart crockpot to make my soup, I knew it would make a large amount. It would fit in a 6 quart crockpot.
Spray your slow cooker with a nonstick spray or line with a slow cooker liner

Put in all the ingredients except only add 1/8 cup of the cilantro. The rest will be garnish for the soup.
Set the slow cooker to low and cook for five hours.
At the five-hour mark, remove the chicken breasts and shred them. If you have already cooked shredded chicken or shredded chicken taco meat, you can just let it keep cooking.
Put the chicken back in the crockpot and cook for at least one more hour.

Substitutions & Alterations
For the Chicken – You can use ground chicken, shredded turkey breast, and ground turkey are zero point options. Ground beef would add in points but 93% is the lowest point value
For the Cilantro – When it comes to cilantro, know your audience. Some people are really put off by the smell and the flavor of fresh cilantro. They can’t help it: it’s a genetic thing.
For the Rotel With Green Chili – You can swap out for a can of diced tomatoes and a can of diced green chilis

The only thing with points in this recipe is the enchilada sauce. And any of your toppings
The 10-ounce can of enchilada sauce works out to 3 points for all 10 ounces. As long as you portion 7 servings out of your crockpot soup, you will have a zero-point serving.

Tips & Tricks
Spray your slow cooker with a nonstick spray or line with a slow cooker liner for easy cleanup.
If you are using whole, skinless chicken breasts, remove them at the 5-hour mark and shred them. Then return the shredded chicken to the crockpot to finish cooking. I use meat claws to do this.

- Raw or sauteed bell peppers (0 points)
- Diced fresh tomatoes (0 points)
- Raw or pickled sliced jalapenos (0 points)
- Sliced avocado (1-3 points)
- Black or pinto beans (any beans or pulses) (0 points)
How to Store Leftover Soup
Store leftovers in a well-sealed, airtight container. Stored properly, refrigerated soup will be at its best for up to 5 days.
To freeze leftover soup, allow the soup to cool completely and place in a freezer-safe bag or container. Remove as much air as possible. Freeze up to 3 months.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The air-tight container and a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

How to Reheat Chicken Enchilada Soup Crockpot
Reheat soup in a pot on the stove or in the microwave.
On the stove – Reheat in a pot over medium high heat until the soup is warmed through completely.
In the microwave – Place soup in a microwave safe dish and heat on high for 2-3 minutes until heated through completely.

- 2 Cups Chicken Broth
- 1 White Onion
- 20 Ounce Rotel With Green Chil
- 1/4 Cup Fresh Cilantro
- 1 Tablespoon Minced Garlic
- 1 Teaspoon Chili Powder
- 1 1/2 Teaspoon Ground Cumin
- 1 Teaspoon Salt
- 1/4 Teaspoon Ground Black Pepper
Instructions
- Dice up your onion and cilantro.
