Easy Hamburger Soup Recipe!!

This Easy Hamburger Soup Recipe is one I have been making since 2013. We haven’t really made any changes to it, but it always gets made every fall and winter. It’s one of my go-to recipes for meal planning, especially on busy soccer nights.

This recipe was first published in 2013 and republished in 2018.
The content was refreshed in 2024 with more suggestions to spice it up.
One of the small changes we have made and that we love is to put some spaghetti sauce into the soup, and we had a time I was out of tomato soup. This adds some different flavors to it if we use a flavored sauce.
Take a lot of prep work out of weeknight dinners and precook and freeze your cooked ground beef! Pull and defrost the ground beef from the freezer to put in this recipe for an easy weeknight dinner! (If you aren’t sure how to best do this, check out Freezing Cooked Ground Beef)

Hamburger Soup Recipe Ingredients:
Water
Pasta– I mainly make this with rotini pasta but have also done it with wagon wheel pasta and elbow noodles.
Salt and Pepper to taste

How To Make Hamburger Soup:
Boil water in a large pot to cook the pasta until tender. Optional step: add a teaspoon to a tablespoon of olive oil to help the noodles not stick.
Brown or defrost your ground beef, and drain the grease if needed.
In another pot, combine the beef broth, water, corn, and minced onion and boil. If you are adding other seasonings or ingredients, you can add them at this step.
Strain pasta when it is done and add to the pot with the broth mixture and add the cooked ground beef. You can add in more seasoning or spaghetti sauce at this time.

Simmer for 10 minutes to allow the flavor to cook into the noodles and meat. Stir occasionally.

Serve!

Alternate Ingredients To Add To Hamburger Soup
What I put in our hamburger soup was basic; when my kids were younger, they did not like much of anything, so I made plain recipes. You can easily add many options to this recipe to satisfy any taste bud.
This is amazing, topped with cheese and sour cream, in addition to changing up the ingredients.
- Macaroni Noodles
- Tomatoes- either canned diced or fresh tomatoes
- Carrots
- Mixed frozen vegetables or mixed canned veggies
- Diced Celery
- Beans
- Bay Leaf
- Chili Powder
- Basil
- Oregano
- Worcestershire Sauce
- Tomato Paste
How To Store Quick and Easy Hamburger Pasta Soup
Pour the remaining hamburger pasta soup into an airtight container or a Ziploc bag. Store in the fridge for up to three days.
This soup can be frozen in an airtight container for up to three months without the pasta.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
How To Reheat Hamburger Soup
You can reheat it in the microwave or stovetop from the fridge.
Frozen soup will need to be thawed before reheating, and You can allow the soup to thaw in the fridge or use your microwave settings. Then reheat in the microwave or on the stovetop.

- 1/2 Teaspoon Onion Powder
- 2 Tablespoon Minced Garlic
- 1 Pound Ground Beef
- 10 ounce Tomato Soup
- 10 ounce Water
- 20 ounce Beef Broth
- 15 Ounce Corn
- 16 Ounce Rotini Pasta
Instructions
- In a pot start boil water to cook the pasta.
- Brown or defrost your ground beef, strain the grease if needed.
- In another pot combine the beef broth, water, corn, minced onion and start to bring to a boil.
- Strain pasta when is it done and add to the pot with the broth mixture and add the cooked ground beef. You can add in more seasoning or spaghetti sauce at this time.
- Simmer for 10 minutes to allow the flavor to cook into the noodles and meat.

My Mom used to make this and used potatos instead of pasta and all of us kids loved it.
i was reading your instructions and it says minced onion. But the ingredients doesn’t mention onion. Only minced garlic.
This does sound like such a quick and easy dinner recipe! Pinned.
Proceed with caution. this recipe is not complete. The instructions do not jive with the ingredients at all. I think the onion and garlic are mixed up. The tomato soup disappears. Spaghetti sauce makes an appearance. I’m pretty sure there is so much liquid that the pasta needs to be boiled in the broth too.
It’s an older recipe but it could stand to be revisited.
