How To Make Cottage Cheese Egg Casserole

Spray your 9×13 baking dish with a nonstick spray.

Preheat your oven to 375 degrees.

Slice your bacon and cook until the level of doneness you like on a medium heat. The bacon will cook more in the casserole.

I used my Caraway Skillet to make this in; using pans that don’t release chemicals is essential to overall health.

Remove excess grease from your bacon.

I made this using the Ceramic-Coated Dutch Oven from Caraway pans. Healthy living isn’t just what we put in our mouths directly but also what chemicals our pans release during cooking. I used this recipe as my first attempt to break in my new pans, and I was surprised at how easy the cleanup was. If you have ever made pasta with cheese, you know how hard clean-up can be sometimes. Dice the Canadian bacon into small pieces. I did throw mine in with the bacon, but you don’t have to.

Add cottage cheese, egg whites, eggs, and seasonings into your food processor container.

Blend until smooth.

I used my Ninja blender to do this. I used the Auto-IQ twice, the first time to ensure it was well blended. After the first time, I used a spatula to scrape the walls and stir from the bottom, then blended it again (no cottage cheese chunks got by me).

Spread out the frozen hashbrowns in to the bottom of the pan.

Next, spread the cooked bacon and Canadian bacon on top of the hashbrowns.

Pour the cottage cheese and egg mixture over everything in the casserole dish.

Top with shredded cheddar cheese.

Bake for 45 minutes in the oven. Cooking times may vary, so be sure to keep an eye on it after the 35-minute mark.

Remove and allow to rest 5 to 10 minutes before serving.

  • Fresh Veggies like Green onion, chopped spinach, diced mushroomsdiced white onion, or Diced Bell peppers (red bell pepper or orange bell pepper would be perfect), 
  •  All regular eggs or all egg whites
  • Fresh Herbs- Parsley and basil
  • Different cheeses: Monterey Jack, mozzarella cheese, parmesan cheese, crumbled feta cheese, or Pepper Jack
  • Jalepeno

How To Store Leftover Breakfast Casserole

Store any remaining breakfast casserole in the refrigerator. Cover tightly or wrap individual slices in plastic wrap or place in an airtight container. Stored properly, leftover casserole should be good for up to 4 days.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

How To Reheat Breakfast Casserole

Reheat the leftover casserole in the microwave in 30 bursts until heated through.

You can also reheat thawed leftovers in a 350° oven for about 10-15 minutes until warmed through.
