Easy Sausage Breakfast Casserole Recipe

This easy breakfast casserole, using crescent rolls as the crust, is a great and simple way to get in one of the most important meals of the day. Sausage, eggs, and cheese are baked to perfection on a fluffy, puffy crescent roll crust. My kids can’t get enough of this, and you won’t either.

I love a good breakfast casserole. They’re a full breakfast option without the full breakfast cleanup. And my kids absolutely gobble them up, so that’s another great reason to love making them.

And this latest sausage breakfast made with crescent rolls is no exception. It’s packed with eggs, sausage, and bacon bits all baked on top of a beautiful, puffy crescent roll crust.

You can enjoy it as is, or bulk it up with your favorite ingredient additions. Serve it with some fresh fruit, bacon, and a big glass of juice or coffee. I’ve listed some of my favorite options for you below.

Sausage Breakfast Casserole Ingredients

This recipe uses basic ingredients you might even have in your kitchen already.

Crescent Rolls—This is an 8-ounce package of crescent rolls. It contains eight rolls. Do not separate the rolls; use the entire sheet of rolls.

Sausage – I used country breakfast sausage, but you can use any breakfast sausage

Bacon Bits– I used store-bought bacon bits, but you can use freshly cooked crumbled bacon.

Mild Cheddar Cheese– Use shredded Cheese; you can use other variations

Large Eggs

Milk

Substitutions & Alteration Options

  • You can use a regular homemade or store-bought pizza dough for the crust in place of the crescent rolls.
  • Cheese – Feel free to use your favorite type of shredded, melty cheese. Mozzarella and provolone would also work great with this.
  • Turkey breakfast sausage can be substituted for regular. 

  • Add some diced Canadian bacon or ham
  • Plant-based sausage can be used for a vegetarian option.
  • Egg Whites can replace whole eggs for a slightly healthier option

How To Make Sausage Crescent Roll Casserole

Cook your ground pork in a skillet and drain the grease. If you are cooking bacon, do this at the same time.

Cooked Breakfast Sausage

Preheat your oven to 375 degrees.

Grease a 9X13 pan or a small sheet pan. I used Crisco, but you can also use a nonstick spray.

Spread the crescent roll dough whole into the pan. Pinch together the seams of the crescents. If using a 9X13, excess dough will be on one side; that’s fine.

Sprinkle the sausage and bacon bits onto the dough.

Spread your cheddar cheese over the dough and sausage.

Mix the milk, eggs, salt, and pepper in a bowl. I used a Pyrex Measuring cup to make pouring easier.

Pour the egg mixture over the casserole.

Place the casserole dish in the oven and bake for 40 minutes. (The cooking time may vary by oven.) Cook until the eggs are cooked thoroughly.

Tips & Tricks

Do not separate the crescent rolls. You want the whole sheet intact. Pinch together the seams of the crescent rolls when you roll it out in the baking dish so they stay together. If you are using a 9X13 casserole dish, there will be excess dough on the sides; that’s fine.

Start the casserole the night before by cooking your sausage and making your egg mixture. Store them in the fridge until you are ready to use the next morning.

Know Your Meat Substituions-Most imitation bacon bits are made from soy and suitable for vegetarians. You can use a plant-based sausage to make this dish vegetarian-friendly.

For a dairy-free casserole option, use plant-based cheese and milk.

Toppings For Crescent Roll Sausage Casserole

Like any other casserole, you can always dress up this breakfast dish even more. Next time, I plan to serve this with a breakfast sausage gravy poured over top the slices!

  • Salsa or pico de gallo
  • Roasted red bell peppers
  • Diced or cherry tomatoes
  • Mushrooms
  • Spinach

  • Onion or scallion
  • Smashed avocados
  • Breakfast gravy
  • More cheese
  • Pizza sauce
  • Hot sauce
  • BBQ sauce

How To Store Leftover Breakfast Casserole

Store any remaining breakfast casserole in the refrigerator. Cover tightly or wrap individual slices in plastic wrap or place in an airtight container. Stored properly, leftover casserole should be good for up to 4 days.

You can also freeze leftovers for up to 3 months. Let the casserole cool completely before wrapping in plastic and then also wrapping in aluminum foil or placing in a freezer-safe bag. 

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.

How To Reheat Breakfast Casserole

Reheat the leftover casserole in the microwave in 30 bursts until heated through.

You can also reheat thawed leftovers in a 350° oven for about 10-15 minutes until warmed through.
