These bacon and cheese sous vide egg bites are as delicious to eat as they are easy to make. They’re also completely customizable for even the pickiest eater in your house. Get ready for the easiest breakfast you’re ever going to make.

I have fallen in love with the Starbucks sous vide egg bites you can get at Costco. But I had no idea how easy they would be to make on my own! And how much it would save money.
Thankfully, I recently received a sous vide machine from Typhur. (And it is the best!) So I knew I had to try and make my own sous vide egg bites. It is so, so easy! Sous Vide cooking will change your life!
Just blend the ingredients, add them to your jars, and place them in the sous vide. This might be the easiest recipe I’ve ever done!

Ingredients For Cheese And Bacon Egg Bites
These easy sous vide egg bites are made with basic ingredients you probably have around already. You can substitute the cheese flavor for any of your favorites.
- Eggs – I used large eggs for this recipe
- Cottage Cheese – full fat or low fat will work
- Monterey Jack – You can buy the pre-shredded cheese or shred fresh from a block
- Gruyere Cheese – Shredded. I found a wedge in the deli section of the store and shredded the wedge. (Amazon has it-> here as well.)
- Bacon – Slice and pre-cook this before you cook the egg bites. You could substitute in Bacon bits or precooked crumbles
- Salt – to taste

How To Make Sous Vide Egg Bites
Fill your Typhur Sous Vide station with water and let it start heating up to 170 degrees. If you are not using the all in one station prepare your Sous Vide according to the directions with the boiling water.

Chop your bacon into small pieces and cook it to your liking.
Remove your bacon from the grease and place on a paper towel-lined plate. This removes any excess grease.
Add your eggs, cottage cheese, salt, Gruyere, and Monterey Jack in a blender. I used a Ninja Nutri Pro Compact Personal Blender it worked great with the lid to pour into the jars.

Puree the ingredients until smooth. I used the ultra blend button on my machine.

Spray the inside of your 4-ounce mason jars with a nonstick spray. (Walmart also has the four-ounce jars in stock -> here if you are having issues finding them. )

In each jar, add an even amount of bacon and top with the blended egg mixture. The amounts in the recipe card make 6 jars.

Apply the rim of the mason jar and then secure the lid.
Pro Note: you don’t want this to be too tight; I tighten it all the way and then slightly loosen it.

Use tongs to lower your jars into the water carefully.
Don’t overcrowd them. You will want water to be able to move between the jars.
Set the Sous Vide to cook for 1 hour.

Remove the jars carefully with tongs when the timer goes off and allow to cool at room temperature before storing in the fridge.

Substitutions & Alterations
- Ricotta cheese can be used in place of cottage cheese.
- Any other shredded cheese, like cheddar cheese or pepper jack cheese, can be substituted for the Gruyère cheese and Monterey Jack Cheese. And even feta cheese will work.
- Add some veggie options like broccoli, red bell pepper, mushrooms, green onion, tomatoes, onions, and kale or spinach.
- Add in roasted red pepper for a kick.
- Replace the chopped bacon with diced ham, candian bacon, or sausage pieces.
Substitutions To Lower the WW Points and Calories
Check out some great options to make this a fantastic recipe for Weight Watchers egg bites. Not only do these options lower Weight Watchers points, but they also lower the calorie values and macro information if you are tracking either of those.
- Turkey Bacon – 8 slices of Turkey Bacon is only 8 Weight Watchers points compared to eight pieces of pork bacon coming in at 15 WW points.
- Cottage Cheese – Fat Free Cottage Cheese is zero points where, whereas full-fat cottage cheese is worth 3 points. WW egg bites with cottage cheese is a great way to start your day
- Eggs – You can use all egg whites or do a combination of eggs and egg whites. This will lower the fat and calorie amounts.
- Reduced fat cheese – You can swap out the cheeses used to lower points and calories.
Tips & Tricks
- Make sure the water in the sous vide machine is heated thoroughly before adding the jars or it will increase cook time.
- Don’t overcrowd the jars. You will want water to be able to move between the jars so they are cooking on all sides evenly
- Use tongs to place your jars in the sous vide machine and to remove them.
- Let the jars cool before attempting to open or storing.
Additional Details
I used the Ninja Nutri Pro Compact Personal Blender to blend my egg and cheese mixture. You can probably also use an immersion blender or high-speed blender to achieve the same results.
I have made similar to these in as Instant Pot Egg Bites. I used a silicone mold in the Instant Pot to make them. They are close to these sous vide egg bites.
I ‘ve tried making them baked in the oven in a muffin pan but it hasn’t worked for me.
How To Serve Cheesy Bacon egg Bites
You can eat these on the go from the jar. I love using them for meal prep for the busy weekday mornings. They’re great hot or cold, in or out of the jar. You can also reheat them on a plate and serve as part of a larger breakfast.
- Serve with a side of cottage cheese and fresh fruit salad
- Eat one or two with some easy Breakfast Sausage Biscuit Roll Ups
- Wash them down with a delicious protein shake
- Homemade Bagels with cream cheese
- Serve them with Hash Browns or Air Fryer Potatoes
- Top with more cheese and bacon
How To Store Sous Vide Egg Bites
Allow the cooked egg bites to cool completely at room temperature.
Store cooled sous vide egg bites in the jar in the fridge for up to 5 days.
If you remove them from the jar to store, I’d use them within 3-4 days.
You can also remove the egg bites from the jar and store them in a freezer safe airtight container for 2 months.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
How To Reheat Egg Bites
Reheat in the microwave on high for 30-45 seconds for 1 egg bite or 45-1 minute for 2 or 3 egg bites. 1-2 minutes may work at a lower temperature setting. Let rest for 15 seconds or so before eating.
Thaw frozen egg bites a little in the microwave before reheating on high.

Costco has a wide variety of sous vide egg bites including Starbucks and Three Bridges brand available at many of their stores. That’s where I first fell in love with this delicious little breakfast treat. Check your local store for availability.

- 1/3 Cup Gruyere Cheese
