Easy Taco Twist Casserole Recipe

This Taco Twist Casserole Recipe is a childhood favorite of mine that my mother used to make. Combine pasta, cheese, Doritos, and ground beef with taco seasoning into a casserole, you really can’t go wrong. Putting this into your meal rotation will keep the whole hungry full and happy, plus it’s picky eater approved.

This recipe was first posted in 2015 and updated in 2025.
When life gets busy finding a theme night for dinner sometimes helps to make meal planning a breeze but also let’s face it Taco Tuesday can never go out of style. Mkae this Doritto casserole is one way to change it up from tacos and it’s easy to make. Cheese, Doritos,and pasta it really can’t go wrong. This recipe has been made in my family for 30 years, trust me it’s a keeper!

Hamburger– This will be cooked and drained of grease before going into the casserole
Taco Seasoning– You can use a store-bought container, a taco seasoning packet, or homemade taco seasoning to make this recipe.

How To Make Taco Twist Casserole:
Preheat your oven to 350. Gather up your ingredients.

Start by boiling water for the noodles and start browning your hamburger. I used precooked and frozen ground beef so all I had to do was thaw it.
Take a lot of prep work out of weeknight dinners and precook and freeze your cooked ground beef! Pull and defrost the ground beef from the freezer to put in this recipe for an easy weeknight dinner! (If you aren’t sure how to best do this, check out Freezing Cooked Ground Beef)

Drain grease from the hamburger when cooked.
Add the tomato sauce and taco seasoning to a pan with the cooked ground beef. (I use my own taco seasoning grab the recipe -> here)
After your noodles are done drain them and put them back into the pot.

Add sour cream and 1/2 cup of Shredded Cheddar Cheese to the noodles in the pan.
Stir until Kraft Shredded Cheddar Cheese is melted.
Spray a 9X13 pan, spray with nonstick spray. I perfer to use a Pyrex 9X13 with a lid to make storing leftovers easier.
Spread out the noodle mixture out in the bottm of the casserole pan.
Pour the meat sauce mixture over the noodles in the casserole pans.

Top with remaining cheese. If you want you can top with more cheese then what the recipe calls for.
Bake for about 30 minutes.
Crush your Doritos to the top of the casserole.
Remove the casserole pan and top with crushed nacho cheese tortilla chips.
*I have added the Doritos before baking and they brown and are a bit softer. Either way is still delicous.*
Bake for five more minutes.
Remove and serve!

What To Serve With Taco Twist Casserole
There is no wrong side dish! We often make this with tortilla chips and melted cheese, making easy nachos that picky eaters will love.
How To Store Leftover Taco Twist Casserole
Store in the fridge in an air-tight container for 3-4 days.
I have never tried to freeze leftovers, as the dish usually disappears by the time everyone eats it the next day.
How To Reheat Taco Twist Casserole
You can reheat this casserole in the microwave on the plate, in the oven in the casserole dish, or on an oven-safe plate.

Ingredients
- 3 Cups Rotini Pasta
- 1 Pound ground beef
- 15 Ounce Tomato Sauce
- 1/2 Cup Sour Cream
- 1 Cup Cheddar Cheese
- 1 Ounce Taco Seasoning
- 3 Cups Nacho Flavored Tortilla Chips
Instructions
- Preheat your oven to 350.

- In the noodle, pan add sour cream and 1/2 cup of Kraft Shredded Cheddar Cheese and mix until Kraft Shredded Cheddar Cheese is melted.
- In a 9X13 pan spray with nonstick and spread out the noodle mixture.
- Pour the meat sauce mixture over the noodles in the casserole pans.
- Top with remain cheese, you can add more if you want.
- Bake for about 30 minutes.
- Crush your Doritos to the top of the casserole.
- Remove the casserole pan and top with nacho cheese tortilla chips.
- Bake for five minutes.
- Remove and serve!

Cook Time 30 minutes+
This is a great recipe for busy families. I make 2 pounds of taco meat, instead of one pound, for soft tacos. While the meat is cooking I boil the pasta. After dinner I put this Taco Twist casserole together and place it in the refrigerator. A few days later just pull it out and heat in oven. Dinner is essentially made, just add a vegetable side dish. Sometimes I add a can of beans to the taco meat which stretches the meat even further, especially when feeding hungry boys.
