Instant Pot Egg Bites AKA Copy Cat Starbucks Eggbites

These Instant Pot Egg Bites are perfect for anyone on the WW plan!  Especially since eggs are zero points on the Weight Watchers Plan. Protein is an excellent start to the day, but these are also great little snacks for during the day or to eat on the go, and way better on the pocketbook than Starbucks Eggbites.

We made these on a staycation as Copy Cat Starbucks Sous Vide.  All the kids ate them, which can be a rarity with our bunch.  Plus, they are easy to customize batches to different taste buds. I was excited to find silicone egg molds on Amazon, and they worked perfectly!!

WHAT IS Weight Watchers?

When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.

New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.

I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022 similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, they work to help you learn healthy eating habits. I have hit lifetime goal weight several times but stopped operating the plan and tracking, so the weight does creep back on. Instant Pot Egg Bites Ingredients:

  • Eggs
  • Bacon
  • Diced Ham
  • Shredded Cheese
  • Milk
  • Cottage Cheese
  • Butter 
  • Dry Mustard
  • Garlic Powder 
  • Salt 
  • Pepper 

**You can change up the meat, type of cheeses, add in vegetables, etc we just started with this**

 

How To Make Instant Pot Egg Bites:

Place the bacon on a cookie sheet and bake for about 10 to 15 minutes. The bacon will cook a bit in the instant pot, so don’t cook it too crispy.

Place your dozen eggs, butter, seasoning, and cottage cheese in a large mixing bowl.  We used an immersion blender if you don’t have one, a handheld mixer will work.

Rub the silicone cups with oil, or we used butter since no one packed the oil.  These are the silicone molds I got off of Amazon -> here, but there are a couple of different options.

Put about a half cup of water in the liner of the Instant Pot and turn the Instant Pot to saute to warm it up.

Cut bacon into chunks that will fit in the egg cups dish. We used scissors to cut up the bacon.

Press the bacon into a cup, or place ham into the bottom of the silicone cup.

Pour some egg mixtures from the large bowl into a pour-able Pyrex measuring bowl and add cheese. Watch for cheese clumping as you are pouring from the measuring bowl.

If you aren’t comfortable pouring with the cheese, you can layer in the silicone pan on top of the bacon and top of the egg mixture.

Make sure your trivet is in the bottom of the instant pot and make sure the handles are upwards for easier removal of the pans after it’s done cooking.

Place carefully in the instant pot; if doing both silicone egg pans, make sure the cups line up so they stack

Seal the instant pot lid, press the manual, and press the plus sign/minus sinus until the display screen says 6.

Walk away and allow to cook.

When the Instant Pot beeps that the cooking has ended, wait 10 minutes for a natural release; then, you can release the pressure valve.

Remove the pans by grabbing the handles of the trivet with a towel and lifting the molds slowly out.

We placed a large dinner plate over the silicone pan and flipped the egg bites out of the molds.

Serve and enjoy!!

And you can see the cute ones out of the green pan!!!  My kids preferred the ham ones.

Other Ingredients To Put In Egg Bites

  • Diced Bell Peppers
  • Diced Tomatoes
  • Sausage Crumbles
  • Monterey Jack Cheese
  • Heavy Cream
  • Spinach
  • Feta Cheese
  • Roasted Red Peppers

Weight Watchers Smartpoints Breakdown For Instant Pot Egg Bites:

This is not an exact breakdown, but each cup had a half piece of bacon.  So adding up all the ingredients, it’s 10 points for the whole batch without bacon; bacon will add 1 point per egg bite.  We know this made over 25, but not sure of the exact because we used different size molds.  Overall each cup will be low points; the ham ones will be even lower if using a lean ham.

Instant Pot Egg Bites AKA Copy Cat Starbucks Eggs

These Instant Pot Egg Bites are perfect for breakfast!! They are the perfect copycat Starbucks version to eat at home plus they are low weight watcher points and keto friendly as well!! Customize with different proteins, cheese, and vegetables

Equipment

  • Instant Pot

Ingredients

  • ½ cup cottage cheese
  • 2 Tablespoon butter
  • Dry mustard

  • Salt
  • Pepper

  • In a large bowl (or pot in our case since we ran out of bowls in the condo) place in your dozen eggs, butter, seasoning, and cottage cheese.  We used an immersion blender, if you don’t have one just drop it in a blender and let it blend.
  • Rub the silicone cups with oil, or we used butter since no one packed the oil, or nonstick spray
  • Put about a half cup of water in the liner and turn the Instant Pot to saute to warm it up

      We did not cover them when we made them. They also seem to grow a bit taller then the mold sometimes if they poof up.

      I wonder also. I made egg bites with sauteed peppers and onions this morning without cottage cheese and they were great! If you don’t have it, you don’t need it! I do cover mine with foil to keep excess water out of them.

      I’ve never used cottage cheese in my egg bites. I use cream cheese, cheddar cheese and heavy whipping cream in one of my recipes. Our favorite uses shredded Parmesan cheese (not the green can stuff) and heavy whipping cream. All of my egg bites have either bacon or sausage in them.

      Hi Emily. Your IP may have a “Pressure Cook” button, like mine, which is the same as manual.

      These egg bites were really good! The only thing I’d change is to use more water in the bottom of the Instant Pot. I added only a 1/2 cup and I got the “Burn” message & had to cancel, add more water and restart the process again.
