This Rainbow Chip Cake Mix Cookies Recipe is so much fun to make! Isabella was so excited to go and bake up a storm with a family member! The menu for the day was all the cake mix cookies you can imagine. Plus cake mix cookies are easy to make.

Now we made Funfetti Cake Mix Cookies, and we have been trying to find time to make more ever since but time has not allowed it! We figured out what better way than with family right? Plus, Isabella was so excited to bake and make a mess at someone else’s house!!

Rainbow Chip Cake Mix Cookies Ingredients:

  • Rainbow Chip Cake Mix– If you can’t find a rainbow Chip Cake mix a white cake mix will work as well.
  • Eggs-I used large eggs in this recipe.
  • Vegetable Oil
  • Confetti Baking Chips
 

Rainbow Chip Cake Mix Cookies Directions:

Preheat your oven to 350 degrees.

Now what made these Isabella’s favorite was the baking chips, we had never seen these before!  Now the only company I can find this variety from is Great Value at Walmart or Amazon (buy them -> here)

In a bowl mix together all the ingredients until they are well mixed. This was easy enough to do with a spoon no whisk was needed.

Use a nonstick cookie sheet or place parchment paper on your cookie sheet. Now I use parchment paper when I am making a lot of cookies or different varieties. This way I just rip off the paper and lay down fresh paper since I don’t have to wash the pan in between batches. I have to say I love to bake but man the dishes can really add up!

Now my next baking secret is I used a cookie scoop to scoop out the batter if you haven’t tried this, you need to! I love my Wilton Scoop for making all the cookies and even mini muffins. (You can grab one -> here on Amazon)

Bake for about 12 minutes in your preheated oven. Be sure to adjust the time if you know your oven cooks hot or not.

This batch made about 19 cookies for me.

How To Store Cake Mix Rainbow Chip Cookie

Store in an airtight container or a Ziploc bag for three to five days. You can also freeze in an air-tight container for 30 days to 90 days.

  • 2 Eggs
  • ½ Cup Vegetable Oil
  • 1 Cup Confetti Baking Chips
