Fill your Typhur Sous Vide station with water and let it start heating up to 170 degrees. Add your eggs, cottage cheese, salt, Gruyere, and Monterey Jack in a blender.
Puree until smooth. Spray your 4-ounce mason jars with a nonstick spray. In Each Jar, add an even amount of bacon and top with egg mixture.
Apply the rim of the mason jar and then secure the lid.
Pro Note: you don’t want this too be tight; I tighten it all the way and then slightly loosen.
Use tongs to lower your jars into the water carefully, you will want water to be able to move between the jars.
Set the Sous Vide to cook for 1 hour.
Remove and allow to cool before storing in the fridge
