Kodiak Muffin Recipes! Easy High Protein Muffins!

Kodiak protein muffins are the perfect alternative to those nasty store-bought protein snacks that taste like cardboard and cost a lot. If you are new to a high protein or low calorie lifestyle, you may feel like you will never have homemade baked goods again, but that is not the case! For me, these Kodiak muffin recipes completely changed the game for me. They bake up soft, moist, and full of flavor, and my family has no idea they’re getting extra protein in every bite!

These are perfect to keep on hand and make a large batch to keep in the freezer for those busy mornings, an afternoon snack, or just to satisfy the sweet tooth! And the best part is they won’t wreck your goals or your macros. And if your family loves muffins, they will love these, too!

Why Bake With Kodiak Pancake Mix?

Kodiak Cakes pancake mix is one of my favorite baking shortcuts; it’s not the same as Bisquick it’s a bit thicker, or some would say heavier. It’s packed with whole grains and protein, and makes measuring dry ingredients way easier.

  • Only use the Kodiak pancake mix powder. It is important to note that you will not need the water, oil, or eggs, just what is listed in the recipes.
  • Silicone muffin pans are perfect for Kodiak muffins. The best part of these pans is that there are no liners, no sticking, and an easy cleanup since the muffins pop right up.
  • All of these recipes are freezer-friendly. Double the batch and freeze half for later!

Tips for Making Kodiak Muffins

  • Use a cookie scoop. It keeps the batter amounts even, so your muffins bake up uniform and look great. Plus, it’s a great way to keep the mess controlled.
  • Don’t overbake. Start checking for doneness on the early end of the bake time. A toothpick inserted in the center should come out clean when they are done.
  • Freeze for easy meal prep. Let the muffins cool completely, then store them in a Ziploc freezer bag or container for up to 3 months. Thaw overnight in the fridge or microwave for about 30 seconds.
  • Store on the counter or in the fridge. These stay fresh in an airtight container for up to 5–7 days, depending on the recipe.

  • Can I make these into mini muffins? Absolutely. Reduce the bake time and start checking for doneness around 10–12 minutes.
