Instant Pot Shredded Chicken Tacos

Instant Pot Shredded Chicken Tacos are a time saver on Taco Tuesday!! Is there anything better than that day of the week?? This is so easy to make. It can be made in a hotel room and is perfect to bring for cooking for kids in the room!

This will be the main way I do our shredded chicken for tacos from here on out! Taco Tuesday is a hit in our house, even if it falls on a Thursday! This can be made in any size of Instant Pot and almost any amount. Plus these work out to be a Zero points weight Watchers food as well!

I personally use the app Myfitnesspal to track my food.  I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here)  . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

How To Make Instant Pot Shredded Chicken Tacos:

Add about 1/2 a cup of water into the Instant Pot Liner

Turn the Instant Pot on to saute to start to warm up the pot

Boneless chicken breasts seasoned for Instant pot tacos

Season your chicken as desired

Press the manual pressure and press the + sign up to 15

Close the lid and allow it to cook

Remove the chicken and shred it; you can use bear claws. We used scissors from a knife block, do whatever method works for you.

How To Store Leftover 2 Ingredient Chicken Tacos

Store in the fridge in an air-tight container or bag for up to 5 days. You can freeze this meat in a container or bag for up to three months after you cook the chicken.

These Instant Pot Shredded Chicken Tacos are the perfect way to have a tasty dinner on the table in no time! Plus there is no prep work or watching for the chicken to cook! Tacos are a family favorite budget-friendly weeknight dinner. They are perfect for Taco Tuesday!!!

Instructions
 

  • Add about 1/2 a cup of water into the Instant Pot Liner
  • Turn the Instant Pot on to saute to start to warm up the pot
  • Season your chicken as desired
  • Press manual pressure and press the + sign up to 15
  • Close the lid and allow to cook
  • Once done shred your chicken in the pot with either meat claws or kitchen scissors (all we had was the scissors that were in the knife block)
  • Serve up on your tacos and enjoy!!

We had almost five pounds of chicken. You may need to lower cook time if making less chicken
