Easy Lime Chicken Tacos!

These Lime Chicken Tacos are a favorite of mine to make! With being on Weight Watchers, chicken breasts are a favorite and cornerstone protein in meal planning. Boneless skinless chicken breasts work out to 0 points on the plan. If you are tracking macros they are high protein as well.

I love tacos but get tired of ground beef and have completely fallen in love with these lime chicken tacos!!! I love it when I find individually packaged chick breast fillets or frozen ones. You can find them at Perdue farms, Walmart Online or Ohama Steaks for having chicken delivered to your home!!

I found these Lime Chicken Tacos on the Picky Palate and knew it was one I had to try!!! I used three chicken breasts to make these. They are the right size to be sliced into chicken strips to go in the salad, and I plan to use these to make the chicken in my salads.

I personally use the app Myfitnesspal to track my food. I use macros and focus on High Protein (calories, fat, protein, and carbohydrates) and rotate through cuts and maintenance calories. (Use a calculator like this -> here) . I did WW for years, but now that I am more maintenance, with cuts throughout the year, and focusing on mobility with strength training. There is no right or wrong answer, as all bodies are different.

- Boneless Skinless Chicken Breasts
- Limes
- Taco Seasoning– You can use a store-bought taco seasoning pack; I used my own Homemade Taco Seasoning. (get the recipe -> here)

How To Make Lime Chicken Tacos:
Coat the chicken breasts in taco seasoning; I used a bowl to dredge them through the seasoning.
Turn your grill on or warm your pan; I used a George Foreman grill to make mine. Any pannini press will work just as well, or on the stove.
Slice the lime and squeeze it over the chicken in the bowl. Again, use as much or as little as you want. I made mine with a lot of lime juice in the bowl with the chicken.

You can use lime juice instead if you don’t have fresh limes.
Next, cook your chicken!!
Use a meat thermometer to verify your chicken is at least 165 degrees before serving.

I used my George Foreman Grill to cook these. This was the best thrift store find for me at $1.50!!! With some improvising, I placed tortillas in the bun warmer to warm them while the chicken cooked!

- Sour Cream
- Homemade Guacamole
- Salsa
- Pico De Gallo
- Cheese
- Cilantro
- Green Onion
- Avocado
- Shredded Lettuce
- Shredded Cabbage
How To Store Chicken Lime Tacos
Allow the leftover chicken lime taco meat to cool off, then store it in an airtight container. You can keep this in the fridge for up to five days after making it. You can also freeze the chicken for up to 90 days.
Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in a food saver. If not, then an air-tight container or Ziploc bag for the fridge is the way I go. The airtight container or a freezer Ziploc bag are the next best bet for freezing the leftovers. I also use a food scale to measure portions into serving sizes.
