Ice Cream Sandwiches are one of those treats that hit the spot on a hot summer day!! When planning your summer BBQs this year, you might focus on what to grill and serve as appetizers. But don’t forget everyone’s favorite part of a meal – dessert! An ice cream sandwich is refreshing, easy to make, transport, and fun.

We have made our own ice cream sandwiches at home before using regular cookies, but this summer, I would love to step up my dessert game!! I never realized till surfing around on Pinterest how many options there are for ice cream sandwiches.  I know this is one of those desserts everyone in my house will eat!!

Supplies For Making Ice Cream Sandwiches

Ice Cream-You can use store-bought ice cream or homemade ice cream. The ice cream will need to be softened a bit to mold around the cookies.

Cookies– Use for your base; you can use homemade or store-bought cookies. Chips Ahoy makes for an excellent base for an ice cream sandwich. Also, using a cookie mix or cookies baked from cookie dough is fine too! (Don’t worry, Amazon has Ice Cream Cookie Wafers you can buy to make this even easier)

Freezer Paper– Wax paper or parchment paper will also work for this, I like freezer paper personally for things like this, but it comes down to personal choice.

Ice Cream Scooper-Use this to scoop out the ice cream to be shipped into the ice cream sandwiches.

Rubber Spatulas– This can be used to smooth out the edges of the ice cream around the cookies as you assemble the sandwiches.

Baking Sheet– Put the sandwiches on the trays before moving them to the freezer to freeze after assembling them.

Wrapping Material– You can use plastic wrap, Ziploc bags, or wax paper to store the ice cream sandwiches after the set.

Toppings For Ice Cream Sandwiches

These can also be mixed into the ice cream for the sandwich itself or the ice cream sandwich dipped into this to add texture to the ice cream.

Cookie Ice Cream Sandwiches– This recipe produces a soft chocolate chip cookie perfect for making cookie ice cream sandwiches. You do not have to chill this cookie dough! 

Waffle Ice Cream Sandwich-Use homemade waffles or frozen store-bought waffles to make this tasty twist on Ice cream sandwich.

Betty Crocker Ice Cream Sandwiches-Use Betty Crocker Cookie Mixes to make the cookies for the base or one of the Betty Crocker Cookbook Cookie Recipes.

How Long Are Homemade Ice Cream Sandwiches Good for?

Store the ice cream sandwiches in the freezer for up to 2 months. The more airtight container or plastic wrap, the longer the sandwich will last. (But let’s face it, with kids around and how good these are, they won’t last long)
