I have a bit of an obsession with tailgating recipes for watching sports and pairing them up with Coca-Cola™. Thankfully the ingredients to this Easy chicken Quesadilla Dip are things I have on hand quite often. This would also be perfect for serving up for Cinco De Mayo!
Chicken Quesadilla Dip Ingredients:
- Cream Cheese– This will be best at room temperature; I leave mine out for at least an hour before mixing this dip.
- Onion– I used green onions; I will use red onions the next time I make this.
- Chicken Breast– You can boil down a chicken to shred into this or use store-bought chicken breast to put in this. (see how I make my shredded chicken in the crockpot -> here)
- Hot Jelly
- Cheddar Cheese
- Red Peppers
- Green Peppers
How To Make Chicken Quesadilla Dip:
Preheat oven to 350°F.
Fill a pot with water and chicken broth and bring to a boil.
Once boiling, add in your uncooked chicken breasts. (If you don’t want to use the pot, you can use crockpot shredded chicken)
While your chicken is broiling, prepare your vegetables.

Once the chicken is done, please remove it from the broth and shred the chicken. You can use the paddle on a kitchen aid mixer or meat claws and a plate.
Spray your 9-inch pie plate with a nonstick spray; you could also use a 9-inch round cake pan if you choose to.

In a bowl, mix together all your dip ingredients.
Spread the mixture into the pie plate.

Bake for about 20 minutes until heated thoroughly.

Serve up with Wheat Thins and Coca-Cola!!
