This Easy Chicken Enchilada Bake is a high protein, macro friendly weeknight dinner the whole family will love! Layers of tender shredded chicken, corn tortillas, refried beans, enchilada sauce, and melted fiesta cheese baked together in one pan. All the bold Tex-Mex flavor of enchiladas with none of the rolling and ready in under 45 minutes!
In the bottom of the dish, spread out 3 whole tortillas and 3 half tortillas.
In a bowl, combine the taco seasoning with the refried beans.
Use a spatula to spread the beans of the tortillas.
Strain and rinse your black beans, and place in a bowl.
Strain your rotel of the juices and add to the bowl with black beans.
Add to the bowl your chicken and the remaining enchilada sauce.
Stir the mixture in the bowl well.
Place half of the chicken mixture on top of the bean-covered tortillas.
Top the chicken mixture with the remaining tortillas.
Spread the remaining chicken mixture on top of the tortillas.
Top with fiesta cheese.
Bake for 30 minutes.
