Amazing Bean Salad Cowboy Caviar

This Cowboy Caviar aka bean salad is the perfect light dish to make! Perfect for bbqs, tailgating, light lunches and full of protein.

  • 1 can Bush's Black Beans
  • 1 can Bush's Garbanzo Chick Peas
  • 1 can sweet corn
  • Can diced tomatoes or you can use fresh tomatoes
  • 1/2 red onion
  • Chopped Cilantro to taste
  • Chopped Yellow Pepper
  • Amazing Bean Salad Cowboy Caviar Dressing Ingredients
  • 2 Tbsp Olive Oil
  • 3 Tbsp lime juice
  • 1/2 Tbsp Balsamic Vinegar
  • 1/4 Tsp Chili powder *You could increase*
  • 1 Tsp Cumin
  • 1/2 Tsp Salt
  • 1/2 Tsp Sugar


  1. Open your cans and place them in a strainer and then rinse with cold water. Allow the beans and corn to drip over the sink while you prep the veggies.
  2. In a small bowl mix together all your dressing ingredients.
  3. In a larger bowl that can be covered start to mix in everything including the dressing.
  4. Mix well and cover to store in the fridge for at least 30 minutes before serving.
  5. Serve with chips, crackers, or even eat it as is.
