Start by washing your cucumbers and your tomatoes off.
Get out your knife, cutting board, and a large mixing bowl.
Cut off the ends of the cucumbers and slice the pieces into small pieces and place them into a large mixing bowl. We give our ends to the guinea pigs, but you can also use them for the compost bin.
You can peel and deseed the cucumbers; we have no issues eating peels and seeds, so we just cut them.
Slice the ends of your tomatoes and throw them out; we give parts of them to the guinea pigs or throw them in the compost bin.
Cut up your tomatoes into small pieces and add to the mixing bowl.
Cut the ends off your red onion and then slice it in half.
Remove the center of the onion and peel off the skin layers of the exterior of the onion.
Dice your red onions into small pieces and add to the mixing bowl.
Mix the vegetable components of the salad in the mixing bowl.
Add in the Italian salad dressing and mix everything well.
Serve! You can top the Cucumber salad with Feta Cheese as well!
